The Best Vanilla Cupcakes

Ingredients

  • 1 1/4 cup All-Purpose Flour
  • 1 cup Granulated Sugar
  • 1 1/4 tsp Baking Powder
  • 2 Large Eggs
  • 1/3 cup Unsalted Butter Softened to Room Temperature
  • 1/3 cup Milk Ideally 2% Milk
  • 2 tsp Mayonnaise
  • 1/4 tsp Sea Salt
  • 1 tsp Vanilla Extract

Instructions

  • Pre-heat the oven to 365F.
  • Separate the egg yolks from the whites. In a large, dry bowl, whip the egg whites for about 7 to 10min, until smooth. Add the salt and the sugar and continue beating.
  • Add the egg yolks and the vanilla extract, then gradually add the butter. Finish up with the mayonnaise.
  • Gradually add the flour and the milk, alternating between both of them, until you get a smooth, lump-free batter.
  • Pre-line your cupcake tin with cupcake liners, and lightly grease them. Divide the mixture among the cups.
  • Bake in a pre-heated oven at 365F for 25-30 min or until a knife come sout clean.
