1 1/4cupAll-Purpose Flour
1cup Granulated Sugar
1 1/4tspBaking Powder
2 Large Eggs
1/3cupUnsalted ButterSoftened to Room Temperature
1/3cupMilkIdeally 2% Milk
2tspMayonnaise
1/4tspSea Salt
1tspVanilla Extract
Instructions
Pre-heat the oven to 365F.
Separate the egg yolks from the whites. In a large, dry bowl, whip the egg whites for about 7 to 10min, until smooth. Add the salt and the sugar and continue beating.
Add the egg yolks and the vanilla extract, then gradually add the butter. Finish up with the mayonnaise.
Gradually add the flour and the milk, alternating between both of them, until you get a smooth, lump-free batter.
Pre-line your cupcake tin with cupcake liners, and lightly grease them. Divide the mixture among the cups.
Bake in a pre-heated oven at 365F for 25-30 min or until a knife come sout clean.
