Oats and Popcorn Energy Bars

Ok so, I absolutely love energy bars. Not something I snack on regularly, as I prefer fruits (which fill me up better) but sometimes you just need a change 🙂 For this recipe I literally just mixed in whatever I had. That’s how it goes, usually, when I’m cooking or baking. I love to experiment with flavors and change quantities of ingredients (on that note, please remind me to avoid making sugar-free chocolate cakes for New Year’s Eve. Or add too much cocoa and not enough sweetener. The look on my mom and brother’s faces after the first bite was epic. 2015 will definitely be remembered). Enough talking, here’s the recipe:

  • -1/2 cup of uncooked medium oats
  • -2 Tbsp of popcorn, cut in small pieces (you can do it with your hand)
  • -2 Tbsp of raisins
  • -2 medium squares of chocolate (any kind, milk, white or dark), cut into small pieces
  • -1 Tbsp of honey
  • -1 Tbsp of marple syrup
  • -1 crushed biscuit (I used a spanish brand called Gullon, but a Digestive, an Oreo or any other kind of biscuit will work 🙂 – get creative ! )
  • -1 beaten egg, to hold everything together

  • Preheat the oven (180°C)
  • – Mix everything together, then place spread it on a greased mould
  • – Bake for 10-15 min or until the oats become slightly brown

Please feel free to add more ingredients as you wish – that’s the spirit of baking. Just make sure to let me know in the comments below what you think!
