The Fluffiest Vegan Pancakes

A few days ago a friend tagged me on a vegan pancakes video on Facebook. They were so fluffy and like regular ones, so I saved the recipe up for later. Vegan pancakes do not have eggs or dairy, and I love challenges, so I got inspired and decided to make my own vegan pancakes recipe. I’m quite happy how they ended up. Soft, fluffy and filling. As all pancakes should be.


– 3/4 cup regular flour

– 1/4 cup wholewheat flour

– 2 tsp baking powder

– 2 tbsp coconut sugar

– 2 tbsp softened vegan butter

– 2 tsp apple cider vinegar

– 1 cup almond-coconut milk or plant-based milk of choice


1. Add the flour, baking powder and sugar to a bowl.

2. Add the butter and the apple cider vinegar.

3. Gradually add the milk.

4. Lightly grease a pan and bake on each sude until ready.

Sweet Potato Pancakes

Am I deserving of the title “pancake queen” yet ? I love to experiment with pancakes and always try new recipes. Take this one. More of a savoury recipe, but definitely worth trying.


  • 1/2 medium sweet potato, mashed
  • 1 egg
  • 1/4 cup oat flour
  • 1 tbsp coconut sugar
  • 1 tbsp light margarine or butter



  1. Cook and mash the sweet potato
  2. Add the beaten egg, margarine/butter
  3. Add  the coconut sugar and the oat flour
  4.  Gradually add some milk
  5. Lightly grease a pan and bake the pancakes on each side until they’re ready

Strawberry Peanut Butter Overnight Oats (Vegan)

Guys. I was seeing videos and recipe of overnight oats all over the internet but never did them as I like my oats quite warm and creamy – until I made this. This recipe is fast to do, sweet but not too much, and only has 263 calories in total including 7.3g of protein. It’s basically a treat for breakfast, and I love how the strawberries and the maple syrup give this sweet touch. Making overnight oats is perfect for those who don’t have the time to prepare breakfast in the morning.  I hope you enjoy it 😊

Strawberry Peanut Butter Overnight Oats

          1/3 cup rolled oats

          1 tbsp peanut butter

          ½ tbsp maple syrup

          ¼ tsp cinnamon

          1 tsp chia seeds

          ½ cup unsweetened vanilla cashew or vanilla almond milk 

          1/4 cup finelly chopped strawberries


1.       In a glass, mason jar or your container of choice, add the oats, cinnamon, chia seeds, peanut butter, and the maple syrup

2.       Add the milk and stir well

3.       Finelly chop the strawberries and mix them with the oats

4.       Put in the fridge overnight and enjoy for breakfast 😊

Healthy Breakfast Banana Blueberries Muffins

Ok so guys. The situation is as follows, a few weeks ago I brought a second pack of frozen blueberries and just felt like I HAD to use them while making all sorts of cakes. What I love about these banana blueberries muffins is that they can be an awesome snack or breakfast on-the-go, with some eggs or peanut butter. Hope you like them 🙂


  • Servings: ”12″

– 1 + 1/2 medium banana
– 1/2 cup oat flour
– 1/2 + 1/4  cup all purpose flour
– 3/4 tsp baking powder
– 2 tbsp coconut sugar
– 1 tbsp maple syrup
– Pinch of salt
– 3/4 cup blueberries
– 1 egg
– 1 tbsp egg white
– 1/2 cup sweetened almond milk

1. Mash the banana and mix it with the sugar and maple syrup
2. In another bowl, mix the flours, baming powder, and pinch of salt
3. Add the mashed banana to it
4. Add the beaten egg and egf white
5. Gradually add the milk while stirring
6. Add the blueberries
7. Bake in a preheated oven at 370°F for 25min

Healthier American-Style Blueberries Pancakes

I love saturdays (and week-ends in general) cause I have enough time to wake up and make myself more elaborated breakfasts. One thing I absolutely (and I think everyone) love is pancakes with syrup. I made these american style pancakes today, and I’m sure you’ll like them 🙂 They’re best served with some greek yoghurt and berries.


Healthier American-Style Blueberries Pancakes

Moist and thick pancakes, perfect with some greek yoghurt and berries for breakfast


  • 1/4 cup all-purpose flour
  • 1/4 cup wholewheat flour
  • 1/2 tsp baking powder
  • 2 tbsp coconut sugar
  • 2 tbsp softened butter
  • 1 egg
  • 2/3 cup milk of choice (I used unsweetened vanilla almond milk)
  • 3/4 cup blueberries (if using frozen ones, microwave for 45s)
  • Pinch of salt
  • Some butter or oil to grease the pan


  1. In a bowl, add the flours, baking powder, sugar and pinch of salt. Mix well
  2. Add the beaten egg and the softened butter
  3. Gradually add the milk while continuously stirring the batter
  4. Add the blueberries and mix everything together
  5. Spread some butter or oil on the pan and put 2 tbsp of batter at a time
  6. Bake on medium heat on each side until it is dry
  7. Serve with greek yoghurt and berries

Vegan blueberry pancakes, perfect as an easy and healthy breakfast


  • 1/3 cup oats
  • 1/2 large banana
  • 1/4 cup milk
  • 1/3 cup blueberries
  • Optional: 1 tbsp egg yolk (omit for the vegan version)
  • 2 tsp maple syrup or honey

1. Blend all the ingredients but the blueberries
2. Mix in the blueberries
3. Cook on greased pan until each side is ready (the top should be dry before you flip the pancake)
4. Serve with bananas and maple syrup or honey

Vegan Creamy Coconut Mushrooms on toast

Easy vegan toast, perfect for brunch


  • 2 bread slices  (I used belgian white bread)
  • 1 can of mushrooms, drained and washed
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup coconut milk (I used a light version)
  • 1.5 tbsp corn starch
  • Some rosemary leaves
  • 4 tsp butter


  1. In a greased pan, sauté the onions on low to medium heat
  2. Mix the corn starch with the coconut milk and add it to the pan
  3. Add the spices and rosemary leaves and let it simmer for 2-3 min
  4. Toast the slices of bread and spread 2 tsp of butter on each slice
  5. When mushrooms are ready, divide the mixture between the two toasts and serve

Nordic Breakfast Toast

I’m a massive proponent of brunch. To be honest, brunch >>>> dinner any day. I went on a date recently and my date had a nordic breakfast, which inspired me to make this toast. So much more colorful than cereals, and so full of proteins and all the good stuff 👌 Also. If you look closely, I may or may not have overcooked the poached eggs, so yeah. Still yummy 😎. But don’t overpoach your eggs.

Nordic Breakfast Toast

Breakfast toast high in protein, ideal for week-end brunches.


  • 1 large slice of bread
  • 2 eggs
  • 40g of smoked salmon
  • A handful of spinach or spring mix
  • 2 tbsp of spread cheese
  • A pinch of salt
  • A pinch of black pepper


  1. Boil some water and using an egg poacher, poach the eggs. If you don’t have a poacher, just break the eggs carefully and slowly in the boiling water and boil for 2 min
  2. Toast each bread slice for about 2 min
  3. Spread the cheese on the bread. Put spinach or spring mix, then salmon, and finish with the poached eggs. Finish up with some salt and pepper

French Toast with Homemade Strawberry Jam

I absolutely love french toast. My mom used to make it quite regularly when we were kids. I prefer to cook the bread in a greased pan instead of dipping it in oil. Out of laziness surely (🙈) but also because french toast still tastes good if you cook it in a greased pan. In this recipe, you also get to make your own strawberry “jam” which is cool. Hope you like it 🙂

French Toast with Homemade Strawberry Jam

Breakfast french toast with sweet strawberry jam.


    For the Bread:

  • 3 slices of bread
  • 1/3 cup milk
  • 2 eggs, beaten
  • 1 tbsp sugar + 1 tbsp vanilla sugar or 1.5 tbsp sugar and 1/2 tsp vanilla extract
  • For the Jam:

  • 1/2 cup strawberries
  • 2 tbsp sugar
  • 1 tbsp honey
  • 2 tbsp orange juice
  • Water as requires


  1. Grease and heat a pan (low to medium heat).  Mix all the bread inredients together. Coat each slice with the mixture and bake on each side until brown and crispy.
  2. During this time, finelly slice the strawberries and add all the jam ingredients to a pan. Cook on medium heat, stirring constantly until the strawberries have softened and your get a consistant mixture.
  3. Add the slices to a plate, then put the jam on top and finish up with honey and some light whipped cream (optional)
