Seafood Couscous

Couscous is traditionally eaten every Friday in Morocco. So, I could not let the day pass without getting my fix ! But this time, I tried a seafood version which is so delicious and easy to make.

If you don’t have or don’t like couscous, you can substitute it for quinoa, rice, or barley for instance. Be creative !

Seafood Couscous

Ingredients

Instructions

  1. Melt the butter with some water in a large pot.
  2. Finelly dice the onion and add to the pot with the garlic, half a cup of water.
  3. Cover and let simmer on medium heat for ~5min.
  4. Dice the tomatoes and add to the rest of the ingredients, then add half a cup of water. 
  5. Cover and let cook on medium heat for ~30min.
  6. Remove the cover and let cook for an additional 10-15min.
  7. Cook the couscous as indicated on the pack and serve with the seafood mix.
