These easy-to-make, nutritious cookies contain oatmeal, banana, peanut butter, cinnamon, and vanilla extract – a healthy and delicious vegan snack!

These 5-ingredients Oatmeal Banana Peanut Butter Cookies are one of the best things I have made lately! I am a big snacker with a sometimes somewhat sweet tooth, so keeping healthy snacks on hand is very important when the P.M. sugar craving hits! I especially love cookies to dip into my tea. Store-bought cookies are usually full of additives and sugar, so keep it simple and cheaper – make your own healthy cookies at home with simple pantry ingredients!

The ingredients

Oatmeal: Rich in antioxidants, it also contains a soluble fiber called Beta-Glutan. It also helps lowering cholesterol levels in the blood – a true superstar and a staple in my diet!

Banana: Extremely delicious and nutritious. The complex carbs they mainly contain will help keep you full and energized for a long time in orther to avoid that post sugar rush crash! They are also very helpful in facilitating digestion.

Peanut Butter: Full of good fats! One of the main fats found in peanut butter, oleic acid, helps maintaining the good cholesterol in the blood and improving insulin sensitivity. It is also rich in antioxidants.

Cinnamon: Has anti-inflammatory properties and is high in antioxidants. It also contributes to lowering blood sugar levels.

Maple syrup: Often used as a natural sweetener, it is more runny than honey with a more subtle taste. It also contains more antioxidants than honey.

Vanilla extract (optional): I find it subtly enhances flavors and I like to add it to most recipes, but it is entirely optional and the recipe will still turn out perfectly without it!

Tips for making oatmeal banana peanut butter cookies

  • You can also use almond butter or hazelnut butter instead of peanut butter.
  • You can substitute nut butter for any other nut-free butter (such as sunflower seed butter) or tahini.
  • I prefer to use oatmeal flour – I think it gives a softer texture to the cookies which I love.
  • Feel free to add some ingredients such as chocolate chips on top!
  • Add some vanilla extract for a subtle enhanced flavor!

  • How can I make the cookies sweeter? You can add maple syrup or honey for instance, but might have to add a bit more oat flour to maintain a good consistency of the dough.
  • How long do these cookies last for ? As they contain banana, these cookies can last in an airtight container in the fridge for around 4 days (even though I am sure these will disappear way before!). I personnally don’t store recipes with bananas at room temperature, so cannot say with certainty how long these would stay fresh outside.

  1. Pre-heat the oven to 350°F.
  2. Mash the banana.
  3. Add all the ingredients to a large bowl and combine.
  4. Put some parchment on a cookie tray and put 1 tbsp of batter at a time.
  5. Bake for 15 min and let cool down before eating.

  • Feel free to replace peanut butter with any other butter such as almond or hazelnut butter.
  • If you are allergic to nuts, you can use any nut free butter such as sunflower seeds butter.
  • As they contain bananas, I prefer to store these cookies in an airtight container in the fridge for about 4 days.
