I had planned to write down this recipe aaages ago but uni work and an extreme fatigue left me kinda like a zombie for a few days. But, better late than never, eh ? Speculoos are hands down my favorite cookies – Digestives come next. And they’re super easy to make! Hope you try this recipe, let me know what you think x


– 1 cup + 2 tbsp flour
– 1/2 cup brown sugar
– 1/2 tsp baking powder
– 1/2 cup softened butter
– 1/2 tbsp cinnamon
– 1 egg
– 1/4 tsp salt


1- In a bowl, add 3/4 cup of the flour with the dry ingredients
2 – Add the beaten egg and stir together
3- Melt the butter and add it to the rest of the ingredients while continuing mixing
4- Gradually add the rest of the flour to get a soft, consistant and non-sticky dough. Add some milk or flour- a tablespoon at a time – if needed
5- Ideally leave the dough in the fridge overnight
6- Spread the dough so that it is about 3mm thick
7- Use a cookie cutter to take pieces
8- Bake in a preheated oven at 360F for 20min

Gingerbread Christmas Cookies

Oh my! It’s been ages since I’ve last posted here. Currently writing my proposal and gosh it’s been a tiring process. But I’m almost there so I should be soon back on track and posting more regularly 🙂 So I made these gingerbread cookies a while ago and my office friends liked them so much one of them even had at least 10 of them 🙂 Hope you’ll like them too!

Gingerbread Christmas Cookies

  • 1 + 1/2 cup flour
  • 1/4 tsp baking powder
  • 1/4 cup brown sugar
  • 1/2 cup sugar
  • 1/4 cup molasses
  • 1 egg
  • 1/2 cup softened butter
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp all spices
  • White cookie icing


1- Mix all the wet ingredients together 2- Mix all the dy ingredients together and gradually add the wet ingredients 3- Make a consistent dough. If needed, add more flour to make cutting the cookies easier 4- Spread flour on a flat surface and flatten the dough 5- Using cookie cutters of your choice, cut pieces and place on a greased baking tray 6- Bake for 20min at 350°F 7- Let the cookies completely cool down before decorating with the cookie icing

4-Ingredients Peanut Butter Cookies

Man. Some days I improvise and get quite good recipes. Other days it seems like I need to waste a few recipes before I get something nice. The other day was one of these days. I had to make these peanut butter cookies twice before getting the right consistency. First time, it just looks like I put peanut butter on a tray and baked it. They tasted like burn, and had no shape at all. My despair level seemed to follow and they only increased up a bit more when I also messed up with the second recipe. Thank goodness, I survived, and the third attempt was a good one. The result: yummy vegan cookies which only means everyone can and must eat them 😊

Easy peasy 4-ingredients vegan peanut butter cookies, super quick to make!

  • ¾ cup peanut butter
  • ¼ cup + 1 tbsp coconut flour
  • 5 tbsp maple syrup
  • ¼ cup sugar



  1. In a bowl, mix the coconut flour and the sugar
  2. In another bowl, place the peanut butter and mix in the flour + sugar
  3. Add the maple syrup spoon by spoon, while working the dough so that it is consistent
  4. Using a cookie scoop, place the dough pieces on a greased cookie tray and use a fork to flatten the balls (do it once, turn the fork by 45 degrees and repeat)
  5. Bake for about 15min at 360F or until the edges are golden brown. The cookies should be soft but they will become harder by cooling down
  6. Place the cookies in a sealed container with a slice of bread to keep them soft

Apple Oatmeal Cookies

Ah, cookies! I love to make them. And eat them even more. I also like apples so mich (can you believe I used to find them just about average up until like 6 years ago ? Yeah me neither – used to be a huge #teambanana person). These cookies are just about the right amount of sweet, and I just used 4 tbsp of light margarine (you can use butter) for the whole batch. Hope you like them 🙂

          ¾  cup flour

          ½  cup oatmeal

          ¼  tsp salt

          1 tsp baking powder

          ½ cup brown sugar

          ½ cup white sugar

          1 tbsp maple syrup

          1 tsp cinnamon

          ¼ cup shredded Apple

          4 tbsp softened butter

          ½ mashed banana

          Optional: Some almond milk as needed


1.       In a large bowl, mix the flour with the oatmeal, the salt, the baking powder and the sugar

2.       Grate 1/4th of a medium apple approximately, then mix in the cinnamon, maple syrup, and softened butter

3.       Mash the banana and mix in with the apple

4.       Add the wet ingredients to the dry ingredients

5.       Using a cookie scoop, add one scoop at a time to a greased cookie pan

6.       Bake in a preheated oven at 360F for about 15-20min or until the edges become light brown

Tip: to keep the cookies softer for longer, you can place them in a sealed container with a slice of bread 😊


White Chocolate Chip Cookies

You guys know how much I looooove making cookies. So the other day, I got bored and decided to use the white chocolate chips I had to make these. These biscuits are buttery, soft, amazing, and the white chocolate melts in your mouth when you eat them. Seriously, you all should just make them ✌

White Chocolate Chip Buttery Cookies

Buttery white chocolate chip cookies, perfect with a glass of milk


  • 1 cup flour
  • 1 cup brown sugar
  • 1 tsp baking powder
  • 7g vanilla sugar
  • 2 tbsp egg white
  • 3 tbsp softened butter
  • 1/3 to 1/2 cup white chocolate chips
  • Pinch of salt


  1. Mix the flour, sugar, baking powder, vanilla sugar, and salt together
  2. Add the egg white and butter until you get a consistent dough
  3. Mix in the white chocolate chips
  4. Using a cookie scoop, make about 14-16 cookies and place on a greased cookie tray
  5. Bake in a preheated oven at 360°F/180°C for about 20 min

Peanut Butter Chocolate Chip Cookies

On the one hand we got peanut butter cookies. Heaven. On the other hand we got chocolate chip cookies. Once again heaven. I always wondered why it rarely occurs to people to mix both. Then I stopped wondering and decided to just go for it and make these biscuits. They’re moist. Sweet but not too much. And you can definitely taste the peanut butter. And the melting chocolate chips.

Decadent Peanut Butter Chocolate Chip Cookies.


  • 1/3 cup peanut butter
  • 3/4 cup flour
  • 1/2 cup sugar
  • 1/4 tsp baking powder
  • 1/2 cup chocolate chips
  • 1 egg + 2 tbsp egg white


  1. Add the peanut butter, flour, sugar, baking powder, egg and egg white, and chocolate chips to a bowl. mix well to form a consistent dough.
  2. Using a cookie scoop, take part of the dough and place on a greased cookie tray. Flatten up the cookies.3.Bake at 360°F/180°C for 20min. (NB: the cookies should be firm but soft to touch, and will naturally harden up a bit).

The Best Chocolate Chip Cookies

Yesterday we had a potluck planned with friends, and as a baker I obviously had to go with dessert. I initially planned to make two recipes, brownies and chocolate chip cookies. The brownies ended up very chocolaty and not to sweet, which I really like, as an occasional eater of 99% chocolate (🙈). However, I know not everyone is the same and some people find dark chocolate bitter. Decided to stick with  chocolate chip cookies, cause they’re easy to make and everyone likes them (…riiight?). These are crunchy cookies you will absolutely love with a glass of milk or just on their own. Tip: for crunchier cookies, bake them for 5 more minutes but not more, as cookies harden up when they cool down.

The Best Chocolate Chip Cookies

  • 1 cup flour
  • 2/3 cup brown sugar
  • 1/2 tsp baking powder
  • 1/3 cup softened butter
  • 2 tbsp egg white
  • 1/2 cup chocolate chips (add more if wanted)


  1. In a medium bowl, mix the flour, sugar, and baking powder
  2. Add the softened butter, egg white, and chocolate chips
  3. With a cookie scoop, take one scoop of dough and put on a greased baking tray, then flaten up each scoop with ideally floured hands or the back of a tablespoon
  4. Bake at 360°F/180°C in a preheated oven, or until the top is golden and firm.

Banana Oats Chocolate Chip Cookies

I always like a good chocolate chip cookie. I do not have a particular favorite dish or food (yes, I know) because it’s like having to chose your favorite one among your kids (just to let you know, my mama would pick me obviously if she had to chose). However, I always enjoy a nice cookie. A real one. Not an industrial one. All buttery and sweet and soft and crunchy at the same time. Actually, this recipe is probably blasphematory to the real deal, but I did like it. And it involves bananas 👌

Banana Oats Chocolate Chip Cookies

Refined-sugar free chocolate chip cookies, perfect as an afternoon snack.


  • 1 medium banana
  • 3/4 cup oats
  • 1/3 cup chocolate chips
  • 1 tbsp honey or maple syrup


  1. In a medium bowl, mash the banana
  2. Add the oats, chocolate chips and honey
  3. If needed, add milk of choice 1 tbsp at a time
  4. Form 8 cookies with the dough and put on a greased baking tray. Bake for about 15-20min at 360°F/180°C
  5. Enjoy with some milk!

Lemon Biscuits

I gotta confess. I baked again on Monday. I had some lemons and been thinking for a while about making something with them. First I thought about a cake or cupcakes but somehow found the idea boring. Also, something you gotta now about me is that my favorite part with making biscuits is using the cookie scoop 🤗. 


1 cup flour // 1/2 tsp baking powder // 2/3 cup sugar // 1/4 cup softened butter // 2 tsp lemon juice // zest of one medium lemon // 1 medium egg //


Mix flour, baking powder, sugar and softened butter together. You should get a crumpy texture // Add the rest of the ingredients and make sure everything is mixed well and homogeneous // Either make balls with floured hands or use a cookie scoop to take the dough and place it on a greased baking plate // Bake at 375F for about 20 min until edges are light brown. The biscuits should be soft // Enjoy 😄
