The Best Vanilla Cupcakes
If you’re looking for the best, fluffy, light vanilla cupcakes recipe, don’t move! You’re in the right place. I’m a self proclaimed cupcake queen, cupcakes are my first love. When I moved to London for my studies, I was finally free to experiment as I wished in the kitchen without my mom fearing for the safety of her house. One of the first books I bought (I actually got 5 of them, one for me and each of my aunts, cause my 17-year-old mind) was a cupcakes recipe books. At the time I didn’t bother with any fancy baking equipment and I was literally using a gray pan and a tablespoon for all the mixing purposes. Oh sweet, sweet times 🙂
Since then, my equipment list have become more professional (as professional as it can be at least), and cupcakes are still my first love. There is something soothing about putting the icing on top of the cupcakes and decorating them. They’re also so customizable, so once you have figured out a nice base recipe, you can twist it a bit and add flavors as you wish.
I figured out I needed a solid, simple, and classic vanilla cupcake recipe before anything else. I made a few tries but this is definitely my best version to date. Hope you try and like it!
So what do I need ?

butter
mayonnaise (yes, yes)
vanilla extract
milk
How can I make the cupcakes fluffier ?
To make the cupcakes fluffier, I highly recomment whipping the egg whites first, then gradually adding the sugar, salt, and the egg yolks.
How long can the cupcakes be stored ?
It depends. If you live in a country such as Canada or the UK, leaving them 1 day outside is ok. In warmer countries, you should put them directly in the fridge if you’re not eating them the same day. Cupcakes will keep their freshness in the fridge for up to 3 days. In all cases I’d recommend letting them cool down and eating them the same day, before you put them in the fridge.

The Best Vanilla Cupcakes
Ingredients
- 1 1/4 cup All-Purpose Flour
- 1 cup Granulated Sugar
- 1 1/4 tsp Baking Powder
- 2 Large Eggs
- 1/3 cup Unsalted Butter Softened to Room Temperature
- 1/3 cup Milk Ideally 2% Milk
- 2 tsp Mayonnaise
- 1/4 tsp Sea Salt
- 1 tsp Vanilla Extract
Instructions
- Pre-heat the oven to 365F.
- Separate the egg yolks from the whites. In a large, dry bowl, whip the egg whites for about 7 to 10min, until smooth. Add the salt and the sugar and continue beating.
- Add the egg yolks and the vanilla extract, then gradually add the butter. Finish up with the mayonnaise.
- Gradually add the flour and the milk, alternating between both of them, until you get a smooth, lump-free batter.
- Pre-line your cupcake tin with cupcake liners, and lightly grease them. Divide the mixture among the cups.
- Bake in a pre-heated oven at 365F for 25-30 min or until a knife come sout clean.
