The Best Chocolate Chip Cookies

If there is one recipe every baking enthusiast needs, it’s a good ol’ chocolate chip recipe. Easy and fast to make, gooey, and perfect for any occasion (or non-occasion). I have been hooked on chocolate chip cookies forever. I don’t usually dip mine in milk, though!

A few comments about chocolate chips:

Sugar

White sugar and brown sugar do not exactly behave the same, and playing with ratios will give you different textures. Brown sugar contains molasses, which will make your cookie softer. As a general rule I like to go with a ratio of brown sugar: white sugar of 2:1

Can I substitute coconut sugar for brown sugar?

Yes you can! I personally have never tried but it will surely gave a subtle, nice flavor. I often substitute coconut sugar for granulated sugar in recipes and never had any issues!

How long should I bake these chocolate chip cookies for ?

Perfectionnists I hear you! Cookies are a little bit like babies. Not completely done when they’re out of the oven, they finish their baking outside. Note that all oven are different and adjustments should be made, but ideally cookies should stay in the oven around 10min. I personally find 11min to be the optimal time. Just note it is completely normal if cookies feel too soft, as harder cookies will harden up too much for you to eat them!

The Best Chocolate Chip Cookies

Gooey, soft chocolate chip cookies with a slightly crispy outside!

Ingredients

  • 1 1/4 cup All-purpose Flour
  • 1/4 tsp Sea Salt
  • 2/3 cup Granulated sugar
  • 1/3 cup Brown Sugar
  • 1/2 cup Softened Butter
  • 1 Large Egg
  • 3/4 cup Chocolate Chips I like to use 80%, but lower percentages will do fine as well!
  • 1/2 tsp Vanilla Extract

Instructions

  • Pre-heat the oven to 360F.
  • In a large bowl, mix the flour with the baking powder and the sea salt
  • Mix the brown and white sugar together. Beat the egg and add the vanilla extract, then the sugar
  • Mix the wet and the dry ingredients together.
  • Gradually incorporate the softened butter. Continue mixing until the butter is well incorporated in the dough.
  • Finish by adding the chocolate chips.
  • Bake in a pre-heated oven at 360F for 10-11min. The centers will be slightly undercooked, which is normal. Transfer the cookies to a cooling rack and let them cool down for 1 hour at least before eating them.
