Potato & Kidney Beans Burgers

IMG_20160122_121002 As a fourth year student, I get a lot of free time. Meaning I can spend more time preparing my dishes, which is really awesome 🙂 I was seeing all over the internet all these veggie and vegan burgers and thought ‘wow, I should do the same !’. I absolutely love vegetarian burgers, they’re so versatile. Here’s a recipe I “created” this friday as I had no lectures.

 

 

 

Ingredients

  • 330g of baby potatoes
  • 120g kidney beans
  • 1 cup of spinach
  • Mixed herbs, cumin, salt, pepper to season
  • 1 small egg

 

Method

  1. Boil the baby potatoes or steam them. You can follow my method: peel the baby potatoes, put them in a plate and cover with two layers of cling film. Microwave it all on full power for approximately 10 minutes, or until cooked and soft (my microwave has a 700W power). NB: Make sure you leave a small hole on the side (my mom taught me this good technique if you don’t have a steamer – you can even cook meat or chicken in less than 12 minutes!).IMG_20160122_110504
  2. Using a similar method, steam canned kidney beans in the microwave. Follow the guidance on the can for the time needed.IMG_20160122_111647
  3. Humidify the spinach with a little bit of water, then steam it in the microwave for about 2 minutes.
  4. Mash the potatoes, kidney beans all together. Add in the spinach, then season with cumin, mixed herbs, salt and pepper. Add a small egg and mix everything.
  5. Using the mix, form small balls and flatten them.
  6. Cook on a non-sticking pan until golden, on both sides.
  7. Enjoy ! 🙂
