Chocolate cupcakes topped with peanut butter

I’m a big fan of chocolate. And peanut butter, even though I have to eat it with caution and in moderation to avoid allergic outbursts (I am allergic to nuts in general). Well, the other day I decided to mix both of them together 🙂 What is good is that there is no butter or oil at all. Also, I only put an egg white instead of a whole egg. The recipe serves 6.

Ingredients

3/4 cup of flour – 1 tsp of baking powder – 40g of sugar – 1 tsp of honey – 1 tbsp of cocoa powder – 1 tsp of coffee powder – 1/3 cup of ricotta – 5 tbsp of soy milk – 1 egg white

Icing

1/4 cup of ricotta – 1/4 cup of peanut butter – 1/4 cup of icing sugar – some milk if needed to make the icing softer
