Coconut Pancakes

Pancakes and me is the best love story 💕. Apparently when my parents were in the states they used to be obssessed with Aunt Jemima’s ones, and they’ve naturally transmitted the passion to me. My best childhood memories are waking up in the morning during the summer vacation to find large pancakes made by my mom qnd eat them, drizzled with a mix of butter and honey, while watching Malcolm in the Middle and Disney Channel. But enough talking, here’s the recipe 🙂
Ingredients

1/4 cup coconut flour // 1/4 cup all-purpose flour // 1/4 tsp baking powder // 2-3 tsp sugar // 1.5 tsp butter or magarine // 1 egg // 1/2 cup canned coconut milk // 1/2 cup milk of choice (can add more or less, depending on the consistency you want) // coconut flakes or shredded coconut and some honey to put on top

Instructions

Mix the flours, baking powder, sugar, butter/margarine and egg in a bowl // gradually add the milks // Bake on a greased pan for about 4 min on each side on low to medium heat // serve with honey and coconut flakes or shreddes coconut on top 😊
