    Chicken with Zucchini, Peas and Potatoes

    Said it before, I’ll say it again. Eaing “healthy” does not have to be boring. Spices can really take a dish from a 0/10 to a 20/10 in a heartbeat ✌. You can replace the chicken here with extra firm tofu (recommend) or vegan chicken. You can eat this with tortillas or roti if you wish!

    Seafood Couscous

    Couscous is traditionally eaten every Friday in Morocco. So, I could not let the day pass without getting my fix ! But this time, I tried a seafood version which is so delicious and easy to make. If you don’t have or don’t like couscous, you can substitute it for quinoa, rice, or barley for instance. Be creative !

    Peanut Butter Banana Bread

    Another day, another banana bread! This time, a peanut butter banana bread. It has an amazing nutty flavor to it and the texture is quite moist as I love it! I love to play around with banana bread – I had two very (very) ripped bananas sitting in my fridge for aaages until they became all black. So I knew it was a “now or never” kinda thing.     Poffertjes (Dutch Mini-Pancakes)

    Anyone knows what “poffertjes” are? These traditional dutch mini-pancakes are usually eaten with icing sugar and syrup, especially during holidays such as Christmas. You can also add berries and whipped cream on top! Ideally you would use a poffertjes pan, however I just baked mine on a pan and they still ended up spongy and light. The secret is to just put a tiny bit of batter at a time, to keep the poffertjes small, as they will rise and expand a bit. It’s a nice recipe that will be a good adding to a week-end brunch table.     Guys. These brownies were the bomb. Thinking about it, I have probably made brownies one or twice at most in my life. I always get flashbacks of nice childhood memories whenever I eat some, as my mom used to (and still) does make an incredible recipe.
