Vegan Banana Bread (with coconut flour)
I love bananas. So much I always end up with 2 or 3 that get too ripped and that’s when I know it is banana bread time. I love to play around with banana bread and twist recipes, play with ratios – which my roomate absolutely hates. In this vegan banana bread I decided to add some coconut flour, to give a slightly different taste than your usual banana bread. This is much more than a plain vegan banana bread. This is a vegan banana bread 2.0.
Can I substitue coconut flour for another type of flour ?
Of course. Almond flour would do wonders! As it has a weaker taste than coconut flour you could put 2/3 cup of almond flour and 1 + 1/3 cup flour.
Can I just use regular flour only ?
Yes! I think adding almond or coconut flour improves the recipe a bit, but if you prefer a more classical version of banana bread, feel free to use regular flour only.

Vegan Banana Bread with Coconut
Ingredients
- 1 + 2/3 Cups All-Purpose Flour
- 1/3 Cup Coconut Flour
- 2 tsp Baking Powder
- 2 Medium Bananas chose them ripe
- 1 Cup Granulated Sugar
- 1/3 Cup Coconut Sugar
- 1/2 tsp Cinnamon
- 1/3 Cup Softened Vegan Butter
- 2 tbsp Chia Seeds
- 6 tbsp Water
- 3/4 Cup Plant-based Milk I used unsweetened cashew vanilla milk
- 1/2 tsp Sea Salt
Instructions
- In a large bowl, mix the flour with the coconut flour, baking powder, and sea salt.
- Make chia eggs. To a small bowl, add the chia seeds and the water, then let rest for about 7-8min, until the mix is viscous.
- In another bowl, mash the bananas. Melt the butter and mix it with the bananas, then add sugar and cinnamon.
- Add the chia eggs and give it a stir until just combined.
- Add the rest of the ingredients to the banana mix. To do so, alternate the dry ingredients, half a cup at a time, and the milk, 1/4 cup at a time. Stir until well combined.
- Bake in a pre-heated oven at 370F for 50min.
