Lemon Biscuits

I gotta confess. I baked again on Monday. I had some lemons and been thinking for a while about making something with them. First I thought about a cake or cupcakes but somehow found the idea boring. Also, something you gotta now about me is that my favorite part with making biscuits is using the cookie scoop 🤗. 


1 cup flour // 1/2 tsp baking powder // 2/3 cup sugar // 1/4 cup softened butter // 2 tsp lemon juice // zest of one medium lemon // 1 medium egg //


Mix flour, baking powder, sugar and softened butter together. You should get a crumpy texture // Add the rest of the ingredients and make sure everything is mixed well and homogeneous // Either make balls with floured hands or use a cookie scoop to take the dough and place it on a greased baking plate // Bake at 375F for about 20 min until edges are light brown. The biscuits should be soft // Enjoy 😄
