French Beans, Tomatoes, Soy Mince & Carrots Pasta Dish

Finally found the time to sit down and write this ๐Ÿ™‚ (perks of studying engineering I guess!). I found soya mince at my local Tesco the other day and decided to give it a try: no regrets! Was absolutely delicious and although it tastes obviously different that beef or lamb, it is perfect as an alternative to meat based bolognese ๐Ÿ™‚

Ingredients 

โ€“ One can (400g) of chopped tomatoes

โ€“ 2 medium carrots

โ€“ 300g of french beans

โ€“ 200g of mince (I used soy mince, but meat mince is also fine)

โ€“ 1.5 cups of wholewheat fusili pasta (or any other kind, gluten-free pasta can also be used)

 

Method

โ€“ Put some water to boil and add the pasta. Let it cook for about 5-8 min or until ready.

โ€“ Put some coconut oil in a pan.

-Dice the carrots, then add the french beans, chopped tomatoes and mince. Let it simmer for about 7 min. (Add some water if needed).

โ€“ Add the drained pasta to the pan

-Season with salt, cumin, pepper as you like. You may also add some parsley or coriander. Let it simmer for another 5-7 min. Ta daaa!!
