Chicken with Zucchini, Peas and Potatoes

Said it before, I’ll say it again. Eaing “healthy” does not have to be boring. Spices can really take a dish from a 0/10 to a 20/10 in a heartbeat ✌. You can replace the chicken here with extra firm tofu (recommend) or vegan chicken. You can eat this with tortillas or roti if you wish!

    Seafood Couscous

Couscous is traditionally eaten every Friday in Morocco. So, I could not let the day pass without getting my fix ! But this time, I tried a seafood version which is so delicious and easy to make. If you don’t have or don’t like couscous, you can substitute it for quinoa, rice, or barley for instance. Be creative !

    Poffertjes (Dutch Mini-Pancakes)

Anyone knows what “poffertjes” are? These traditional dutch mini-pancakes are usually eaten with icing sugar and syrup, especially during holidays such as Christmas. You can also add berries and whipped cream on top! Ideally you would use a poffertjes pan, however I just baked mine on a pan and they still ended up spongy and light. The secret is to just put a tiny bit of batter at a time, to keep the poffertjes small, as they will rise and expand a bit. It’s a nice recipe that will be a good adding to a week-end brunch table. Try it and let me know what you think! You'll quickly fall…

    2-Ingredients Bagels

This week I am coming with a super easy and fast to make greek yoghurt bagels recipe. Not only they’re high in protein but, since we’re using baking powder, there is no wait for the dough to rise! (I got you, suuuper annoying as I get impatient). The first time I read greek yoghurt and bagels in the same sentence, I was a bit confused. My first reaction was “yeah! greek yoghurt bagels seem healthy” but in the back of my mind, I still somehow had a little doubt about how this could work. Until I decided a few days ago to give it a go. This greek yoghurt bagels…

You know those days when you just need to make something quick and tasty for breakfast ? Or when you have friends sleeping in and you need to make something delicious for brunch. Ah! Those are the days when this express bagels recipe comes in super handy. The secret being, baking powder (yes, baking powder!) is used. Meaning no wait for the dough to rise. I managed to make these bagels in less than 45min, which is quite an achievement! I also brought some to my friends at the office and they all liked them. Hope you try the recipe! These super fast to make bagels require no rising time!…

    Summer Moroccan Salad

Gosh, already one week down of Ramadan. This year’s fast is going quite well – I’m less productive than usual but I don’t let it go to my head so much. The month usually goes by so fast, so I’m glad I’m doing my best at still acomplishing all the tasks I need to do. It’s quite hot in Montreal lately, meaning I have been craving fresh salads and fruits more and more. So thought I’d be sharing this with you! I grew up in Morocco where having tomatoes at home is like having bread or water: it is just so obvious. I also thought everyone else in the world…

    Beefless Ground Dish

Even though I’m not a vegan, I love to eat plant based proteins and I try to have a varied diet as much as possible 😊 Beefless ground is one of my favorite substitutes, so full of flavor, filling, and it mixes well with pretty much everything! I made this dish the other day and been having it for the last few days. The recipe serves 3-5 people. Ingredients: – 3 medium carrots – 2 1/4 cup soy protein – 1 medium white onion – 1 1/2 cup garden leas – 1 tbsp of vegetable oil – 6 tbsp + 1/4 cup of water – 1 tbsp tomato paste –…

    Healthy, 4-ingredients Buckwheat Crepes

One of my favorite desserts is large crepes filled with lots of Nutella. Unfortunately this is not something you can eat everyday for breakfast, however, this super healthy buckwheat crepes recipe will finally make having crepes for breakfast acceptable. Toppings include jam (apricot jam is my favorite!), a little bit of Nutella or peanut butter. Oh and, the best part is that you only need 4 ingredients! Ingredients: – 1/2 cup buckwheat flour – 1 tsp cocounut sugar – 2 beaten eggs – 3/4 cup milk of choice (I used unsweetened almond-coconut milk) Instructions: – In a large bowl, mix the the eggs with the coconut sugar – Add 1/4…

    The Fluffiest Vegan Pancakes

A few days ago a friend tagged me on a vegan pancakes video on Facebook. They were so fluffy and like regular ones, so I saved the recipe up for later. Vegan pancakes do not have eggs or dairy, and I love challenges, so I got inspired and decided to make my own vegan pancakes recipe. I’m quite happy how they ended up. Soft, fluffy and filling. As all pancakes should be. Ingredients: – 3/4 cup regular flour – 1/4 cup wholewheat flour – 2 tsp baking powder – 2 tbsp coconut sugar – 2 tbsp softened vegan butter – 2 tsp apple cider vinegar – 1 cup almond-coconut milk…
