Peanut butter donuts

Okay, I gotta admit I have never been obsessed by donuts. Like, I’ll gladly have the odd one here and there but I’ll take a bagel over a donut everyday 😉🙊. My mom….we’ll it’s another story! When she’s in London she has to get her Krispy Kreme donut. I saw this donut pan the other day and it was in sale, so i was like why not ? I could make my own oven baked version and impress my mommy when she visits. I had to add peanut butter, of course. Peanut butter makes everything better. Don’t disagree 😁

Ingredients

1 cup of flour // 1 tsp of baking powder // 2 egg whites  OR 2 tbsp of chia seeds and6 tbsp of water for the vegan version // 2 tbsp of sugar // 2 tbsp of peanut butter // 1 tbsp of margarine // 1/2- 3/4 cups of soy milk (depending on the consistency of the mix, it should be quite a pancake batter, running but NOT liquid) //

Icing 

1/3 cup of icing sugar // 2.5 tbsp of soy milk // 1 tbsp of peanut butter

Instructions

Mix the dry ingredients together // Add the egg whites, the peanut butter, the margarine // Gradually add the milk until the desired consistemcy is reached // preheat the oven (180C or 375F) // Bake for 25min // when ready, let cool and make the icing by mixing all the ingredients. Make sure you remove all lumps // Coat one side of each donut with the icing // Let rest and enjoy!
