Vegan Cornmeal Cake
When I was a small kid, I used to ate from time to time a very delicious cake my parents would buy from the bakery. I never knew its ingredients, so more than a decade later, all my attempts to find the recipe were unauccessful. My parents were equally helpless.
I organized a late Thanksgiving lunch with some friends a week ago, and I obviously made cornmeal muffins. The first bite was special – I had finally found what I was looking for! The cake I used to eat as a kid had cornmeal in it.
I tried different recipes using cornmeal over the last week, but this gotta be my favorite – of all 😊

Ingredients
1 cup cornmeal // 1/4 cup all purpose flour // 1.5 tsp baking powder // 2.5 tbsp brown sugar // 1 cup soy milk  // 2 chia eggs (2 tbsp chia seeds and 6 tbsp water, let rest for 5 min until viscous) // 2 tbsp margarine //Â
Instructions
In a large bowl, mix all the dry ingredients together // In a separate bowl, mix all the wet ingredients but the soy milk together // Add the wet ingredients to the dry ingredients // Gradually add the soy milk // Preheat the oven to 375F // Grease a pan // Pour the mixture and bake for about 25min
