Black&White cookies

Merry Christmas! Christmas is the time for cookies, right ? Then you might want to try these. I love chocolate and I love vanilla, and love it absolutely more when they mix together.

Ingredients

0.5 cup of all purpose flour // 0.5 cup of oat flour (if you don’t have it, just process regular oats in a blender or food processor until you get flour) // 0.5 tsp of baking powder // 1 tbsp of sugar // 2 tsp of cacao powder // 0.5 tsp of maple syrup // 1.5 tbsp of vegan butter // some soy milk (~1/4- 1/3 cup) (preferably unsweetened)

For the icing

chocolate: 3 tsp of cacao // 2 tsp of icing sugar // 2 tsp vegan butter // 0.5-1 tsp of soy milk (more of less)

vanilla: 4 tsp of icing sugar // 2 tsp of vegan butter // 0.5 tsp of soy milk (more of less) // 1/4 tsp of vanilla extract

Instructions

In a bowl, mix the flours, the sugar, the baking powder, the maple syrup and the vegan butter together // Add milk gradually to the mixture so it gives a firm “dough”, but not too much so it doesn’t become sticky // Divide the mixture into two // Add 2 tsp of cacao powder to one and the vanilla extract to the other // Preheat the oven to 180°C/390°F // Spread some vegan butter and flour on a biscuit plate or put some parchment paper and some flour (you may want to replace the flour with cacao powder underneath the cacao biscuits) // make 3 cm diameter “plates” with the dough and put on the biscuit plate // Bake for about 20-25 min. Adjust more or less as needed 🙂 // While the biscuits are baking, prepare the icing. It should be quite hard and not too liquidy. Put in the fridge // Take out the biscuits of the oven and let cool down // Put white icing between 2 chocolate biscuits  and vice versa. Voilà 🙂
