Spiced Hot Chocolate (Vegan and refined-sugar free)

For some weird reason, even though I love hot chocolate, I haven’t had it in aaaages. I still remember the many cosy nights during my first year in the UK, where I’d take a warm hot chocolate at my local Costa and find a comfy place to study. Or the many times my brother and I, as kids, would have Nesquik for breakfast. Oh sweet, chocolaty memories 🙂 The problem with industrial hot chocolate of course, is that it’s really high in sugar. I abide by a simple rule: I don’t buy cakes, hot chocolate or coffee mixes where sugar is the first ingredient. Cocoa and flour are ingredients – sugar should be an enhancer of flavor, only. I wanted tk recreate a healthy version and let me tell you, it ended up quite delicious 🙂 This is a vegan versiom so really, it’s appropriate for all and I really do hope you’ll give it a try at home.

Ingredients:

1 + 1/4 cup of unsweetened soy milk // 1 tbsp + 3/4 tsp cocoa powder // 3 medium dates or 1 large medjool date (adjust for sweetness) // 1 tsp of all spices (or cinnamon if you don’t have it) 

Instructions

Blend everything // Then warm in a sauce pan on medium heat – while stirring regularly, but don’t bring to a boil
