Nordic Breakfast Toast

I’m a massive proponent of brunch. To be honest, brunch >>>> dinner any day. I went on a date recently and my date had a nordic breakfast, which inspired me to make this toast. So much more colorful than cereals, and so full of proteins and all the good stuff 👌 Also. If you look closely, I may or may not have overcooked the poached eggs, so yeah. Still yummy 😎. But don’t overpoach your eggs.

– 1 large slice of bread
– 2 eggs
– 40g of smoked salmon
– A handful of spinach or spring mix
– 2 tbsp of spread cheese
– A pinch of salt
– A pinch of black pepper

1. Boil some water and using an egg poacher, poach the eggs. If you don’t have a poacher, just break the eggs carefully and slowly in the boiling water and boil for 2 min
2. Toast each bread slice for about 2 min
3. Spread the cheese on the bread. Put spinach or spring mix, then salmon, and finish with the poached eggs. Finish up with some salt and pepper
