    Poffertjes (Dutch Mini-Pancakes)

    Anyone knows what “poffertjes” are? These traditional dutch mini-pancakes are usually eaten with icing sugar and syrup, especially during holidays such as Christmas. You can also add berries and whipped cream on top! Ideally you would use a poffertjes pan, however I just baked mine on a pan and they still ended up spongy and light. The secret is to just put a tiny bit of batter at a time, to keep the poffertjes small, as they will rise and expand a bit. It’s a nice recipe that will be a good adding to a week-end brunch table.     You know those days when you just need to make something quick and tasty for breakfast ? Or when you have friends sleeping in and you need to make something delicious for brunch. Ah!     Lemon Chia Seed Cake

    My favorite cakes are moist, but not buttery cakes. I was sick for a few days and loaded up on lemons, so I just figured out I obviously had to do something involving lemons. And what’s better than a lemon cake? This lemon cake with chia seeds nailed it in terms of texture, and from now on I’ll be following the same ratios in baking.     Guys. These brownies were the bomb. Thinking about it, I have probably made brownies one or twice at most in my life. I always get flashbacks of nice childhood memories whenever I eat some, as my mom used to (and still) does make an incredible recipe.
