Healthier American-Style Blueberries Pancakes
I love saturdays (and week-ends in general) cause I have enough time to wake up and make myself more elaborated breakfasts. One thing I absolutely (and I think everyone) love is pancakes with syrup. I made these american style pancakes today, and I’m sure you’ll like them 🙂 They’re best served with some greek yoghurt and berries.

- 1/4 cup all-purpose flour
- 1/4 cup wholewheat flour
- 1/2 tsp baking powder
- 2 tbsp coconut sugar
- 2 tbsp softened butter
- 1 egg
- 2/3 cup milk of choice (I used unsweetened vanilla almond milk)
- 3/4 cup blueberries (if using frozen ones, microwave for 45s)
- Pinch of salt
- Some butter or oil to grease the pan

- In a bowl, add the flours, baking powder, sugar and pinch of salt. Mix well
- Add the beaten egg and the softened butter
- Gradually add the milk while continuously stirring the batter
- Add the blueberries and mix everything together
- Spread some butter or oil on the pan and put 2 tbsp of batter at a time
- Bake on medium heat on each side until it is dry
- Serve with greek yoghurt and berries
