Healthier American-Style Blueberries Pancakes

I love saturdays (and week-ends in general) cause I have enough time to wake up and make myself more elaborated breakfasts. One thing I absolutely (and I think everyone) love is pancakes with syrup. I made these american style pancakes today, and I’m sure you’ll like them 🙂 They’re best served with some greek yoghurt and berries.

  • 1/4 cup all-purpose flour
  • 1/4 cup wholewheat flour
  • 1/2 tsp baking powder
  • 2 tbsp coconut sugar
  • 2 tbsp softened butter
  • 1 egg
  • 2/3 cup milk of choice (I used unsweetened vanilla almond milk)
  • 3/4 cup blueberries (if using frozen ones, microwave for 45s)
  • Pinch of salt
  • Some butter or oil to grease the pan

  1. In a bowl, add the flours, baking powder, sugar and pinch of salt. Mix well
  2. Add the beaten egg and the softened butter
  3. Gradually add the milk while continuously stirring the batter
  4. Add the blueberries and mix everything together
  5. Spread some butter or oil on the pan and put 2 tbsp of batter at a time
  6. Bake on medium heat on each side until it is dry
  7. Serve with greek yoghurt and berries
