Starbucks Like Pumpkin Scones

What I absolutely love about fall – apart from the pretty orange leaves everywhere – is how we get pumpkin everything, from lattes to cakes 💕 Scones are the one thing I’ve never tried making, so I decided to join the fun and make scones – with pumpkin of course! Hope you like the recipe 🙂

Ingredients

  • 1 + 1/4 cup all purpose flour
  • 2 tbsp coconut sugar
  • 3/4 tsp baking powder
  • 1/3 cup canned pumpkin pie puree
  • 1/4 cup unsalted softened butter
  • 1 egg
  • 1/2 tsp cinnamon
  • 1/2 tsp all spices
  • 1/8 tsp of salt

Directions

  1. In a large bowl, mix the flour with the sugar, baking powder, salt and spices
  2. Add the pumkin puree, then the butter and continue mixing
  3. Add the beaten egg and continue working the dough until you get a firm and soft dough
  4. Roll the dough into a rectangle about 1 inch thick. Cut the rectangle in half lengthwise, then three times widthwise. Cut each rectangle into two triangles
  5. Bake for about 25min at 370°F, or until the top of the scones becomes light brown
