The Best Banana Bread Recipe

If you follow my instagram, you probably know how much I love bananas, and banana bread. It’s most definitely in my top 3 favorite desserts. I have made many banana bread variations among the years. My first attempts ended up too “banany” (if that’s even a word!) or too dense, and not enough fluffy. I made this cake yesterday evening, and I absolutely fell in love with the texture of it.

Banana bread is super easy to make, and you probably already have all you need at home. I always keep some bananas with me at home, some frozen to quickly threw into a smoothie or to make banana “ice cream”, and some at room temperature to make banana pancakes, cookies or cakes.

For this recipe you will need:

  • Bananas (about 130-140g)
  • Cinnamon
  • Flour
  • Sugar
  • Eggs
  • Butter
  • Vanilla Extract
  • Baking Powder

Now my favorite way to eat it is with some peanut butter on top, but I used to have a friend who loved to toast it and spread some butter on top. Either way, it’s a win!

Ingredients

  • 1.5 cup All-Purpose Flour
  • 3/4 cup Granulated Sugar
  • 1.5 tsp Baking Powder
  • 2 Large Bananas 130-140g
  • 1/3 cup Unsalted Butter
  • 1 tsp Vanilla Extract
  • 1/4 tsp Salt
  • 1 tsp Cinnamon

Instructions

  • In a large bowl, beat the eggs, sugar, and vanilla extract.
  • Mash the bananas with the cinammon and add to the wet ingredients. Continue beating.
  • Mix the flour with the baking powder and the salt. Gradually add to the wet ingredients while continuously beating.
  • Pre-heat the oven to 360F.
  • Generously grease a bread pan and pour the batter. Bake in a pre-heated oven for about 40 to 45min (baking times may vary) or until a knife comes out clean.

Notes

I would advise to only use white sugar, as brown sugar will create a more dense, heavier cake
When baking, you should always, unless otherwise instructed, use unsalted butter.
