Beetroot and Tuna Salad
You know when they say pasta is a lazy student’s favorite dish ? Well I gotta disagree! For me salads, just like this amazing beetroot and tuna salad, are not only healthy but also the easiest thing a lazy human can make. Think about it, nothing to cook or boil, just veggies to cut and mix together. Whereas pasta…wait – talking about pasta, I got a nice anecdote. During my second year in the UK, I used to live in a students’ housing, or accodomation as it is called in the UK. The amount of times I forgot (and almost burnt!) my pasta on the stove. (Probably why I stick with salads now). Thank goodness, my good friend Victoria was always there to save the world. So if you read this Victoria, thank you.
Now for this beetroot and tuna salad you will need:
beetroot
tuna
sweetcorn
cucumber
light mayo
I can find tuna to be too dry sometimes, hence why I don’t eat it often, so here I added some light mayo to make it quite creamy. The cucumbers and the sweetcorn then add some crunch. It’s a winning combination! Hope you try it x
Beetroot and Tuna Salad
Ingredients
- 500 g Cooked Beetroot
- 4 cans Tuna preferably in oil
- 1/2 English Cucumber
- 1 medium can Sweetcorn
- 3 tbsp Light Mayonnaise
Instructions
- Finelly dice the beetroot and the cucumber.
- Drain the tuna, then wash and drain the sweetcorn.
- Add all the ingredients to a bowl and add the mayonnaise. Mix well.
- This salad is best served fresh, so ideally put in the fridge for a bit before serving!
