Summer Moroccan Salad

Gosh, already one week down of Ramadan. This year’s fast is going quite well – I’m less productive than usual but I don’t let it go to my head so much. The month usually goes by so fast, so I’m glad I’m doing my best at still acomplishing all the tasks I need to do.

It’s quite hot in Montreal lately, meaning I have been craving fresh salads and fruits more and more. So thought I’d be sharing this with you! I grew up in Morocco where having tomatoes at home is like having bread or water: it is just so obvious. I also thought everyone else in the world had tomatoes everyday – until I moved to the U.K. at the age of 17 🙈

This salad is one my mom has been making for ages – she usually adds some olive oil and vinegar, but as I did not have white vinegar I just added oil and some italian herbs. Hope you like it! ❤

Summer Moroccan Salad

A refreshing, healthy, 5-ingredients salad, perfect as a main or as a side!

Ingredients

  • 2.5 Medium Tomatoes
  • 1 English Cucumber
  • 1 Medium Red Onion
  • 1 tbsp Extra-Virgin Olive Oil
  • 2 tsp Italian Herbs
  • 3 tbsp Finely Chopped Parlsey

Instructions

  • Wash and finely dice the tomatoes, cucumber, and red onion
  • Mix together, finely chop the parsley and add it to the mix
  • Add the olive oil, vinegar, and italian herbs. Mix well and save in the fridge for later!

Notes

This salad is best consumed fresh, so put in the fridge for at least 15min before serving, ideally.
