    Another day, another banana bread! This time, a peanut butter banana bread. It has an amazing nutty flavor to it and the texture is quite moist as I love it! I love to play around with banana bread – I had two very (very) ripped bananas sitting in my fridge for aaages until they became all black. So I knew it was a “now or never” kinda thing.     Poffertjes (Dutch Mini-Pancakes)

    Anyone knows what “poffertjes” are? These traditional dutch mini-pancakes are usually eaten with icing sugar and syrup, especially during holidays such as Christmas. You can also add berries and whipped cream on top! Ideally you would use a poffertjes pan, however I just baked mine on a pan and they still ended up spongy and light. The secret is to just put a tiny bit of batter at a time, to keep the poffertjes small, as they will rise and expand a bit. It’s a nice recipe that will be a good adding to a week-end brunch table.     My favorite cakes are moist, but not buttery cakes. I was sick for a few days and loaded up on lemons, so I just figured out I obviously had to do something involving lemons.     Guys. These brownies were the bomb. Thinking about it, I have probably made brownies one or twice at most in my life. I always get flashbacks of nice childhood memories whenever I eat some, as my mom used to (and still) does make an incredible recipe. These brownies I made are soft, moist, and just the perfect brownies texture.
