Another day, another banana bread! This time, a peanut butter banana bread. It has an amazing nutty flavor to it and the texture is quite moist as I love it! I love to play around with banana bread – I had two very (very) ripped bananas sitting in my fridge for aaages until they became all black. So I knew it was a “now or never” kinda thing. Poffertjes (Dutch Mini-Pancakes)
Anyone knows what “poffertjes” are? These traditional dutch mini-pancakes are usually eaten with icing sugar and syrup, especially during holidays such as Christmas. You can also add berries and whipped cream on top! Ideally you would use a poffertjes pan, however I just baked mine on a pan and they still ended up spongy and light.
