Burgers with Beetroot “Coleslaw”
What I like about summer is all the BBQs of course. I made this recipe the other day and it’s the perfect one to change from your traditional burger with ketchup and yellow mustard 👌 Hope you’ll like it! Burgers with beetroot “coleslaw” (serves 2) Ingredients 1 large carrot or 2 small ones // 2 burger buns // 3-4 tbsp mayo // 1 medium beetroot // a pinch of salt and pepper // 1 tsp cumin // vegetable oil // 8 oz low-fat minced beef // some parsley and coriander Instructions Grate the carrots and the beetroot // add some salt and the mayo and mix well together // In…
Coconut Pancakes
Pancakes and me is the best love story 💕. Apparently when my parents were in the states they used to be obssessed with Aunt Jemima’s ones, and they’ve naturally transmitted the passion to me. My best childhood memories are waking up in the morning during the summer vacation to find large pancakes made by my mom qnd eat them, drizzled with a mix of butter and honey, while watching Malcolm in the Middle and Disney Channel. But enough talking, here’s the recipe 🙂 Ingredients 1/4 cup coconut flour // 1/4 cup all-purpose flour // 1/4 tsp baking powder // 2-3 tsp sugar // 1.5 tsp butter or magarine // 1…
White Irish Soda Bread
When I was living in England, I used to get irish soda bread from the store ALL the time. For those who don’t know, orish soda bread is special in that it doesn’t use yeast. Hence, you don’t wait for the dough to rise. And it’s got buttermilk in it, making it super yummy and easy to make. I saw a lot of recipes online use eggs and butter, and plenty of other ingredients, but then that’s a cake. Real, traditional soda bread only has flour, baking soda, salt, and buttermilk. Well I added some sugar in this one but just so it is softer. So there you go: Ingredients…
Patriotic Popsicles (Strawberry/Blueberry)
To be honest with you guys, I was never a massive fan of ice cream. Don’t get me wrong, I do eat it when given the occasion and I find looking at ice cream cones pictures satisfying. However, I could stop eating it for the rest of my life 😌 However, with #popsicleweek and two national holidays coming up (Canada Day and the 4th of July), I thought let’s make some healthy popsicles. So there you go 🙂 Ingredients 1 1/4 cup yoghurt // 1 tbsp honey // 3/4 cup strawberries // 1/3 cup blueberries // 2 tsp lemon juice // 2 tsp sugar Instructions Wash the fruits and dice…
Lemon Biscuits
I gotta confess. I baked again on Monday. I had some lemons and been thinking for a while about making something with them. First I thought about a cake or cupcakes but somehow found the idea boring. Also, something you gotta now about me is that my favorite part with making biscuits is using the cookie scoop 🤗. Ingredients 1 cup flour // 1/2 tsp baking powder // 2/3 cup sugar // 1/4 cup softened butter // 2 tsp lemon juice // zest of one medium lemon // 1 medium egg // Instructions Mix flour, baking powder, sugar and softened butter together. You should get a crumpy texture // Add…
Batbout (Moroccan Semolina Pan Bread)
No bread ? No problem. This moroccan semolina bread is called “batbout” and it’s pretty much superman, as you literally cook it in a pan. For 1 medium batbout or 2 small ones: Ingredients: 1/2 cup fine semolina // 1/4 cup all-purpose flour // 1/2 tsp yeast // a pinch of salt // about 1/3 cup of warm water Instructions: In a large bowl, add the flour, semolina, yeast and salt // gradually add the water to form a non-sticky dough // Form a ball and let it rest for about 45 min // When ready, spread the dough circularly until is about 1 cm thick // Grease a pan…
Pie Crust
I love making stuff from scratch. Messy hands are the best hands 🤗. Pie crust dough is super easy to make and customizable whether you want it sweet or not. Here we go: Ingredients 2 cups flour // 3/4 cup softened (not liquified) butter (you can use vegan butter or margarine too) // 1/2 cup water // (optional: for a sweet crust, add 3 tbsp of sugar) Instructions In a large bowl, mix the flour and the softened butter. You should get a lumpy, sand-like texture // Gradually add the water while working the dough. You should get a soft and light dough. If too sticky, add some flour as…
Veggie tart
I wanted to recreate this tart where veggies look like flowers for aaaages. Yesterday I finally sat down and decided to make it. For this one I used carrots and courgette/zucchinis cause it’s easy to get thin slices of them. I also made my own crust, cause it is funnier but any store-crust would do fine as well. I hope you’ll like it just like I did 🙂 Ingredients For the homemade crust ——————– 2 cups flour // 3/4 cup softened (not liquified) butter // 1/2 cup water For the filling ——————– 2 eggs // 1/4-1/3 cup milk (depending on the size of the pie) // 2 tbsp double cream…
Raisins – Speculoos Parfait
Everything involving Speculoos is a good thing. Just pike this yoghurt parfait for example. Sweet, full of goodness (Speculoos are good for the mind right ?) and damn so pretty. This is quite rich, so perfect as a cheat. I actually got this idea while doing my groceries. For foodies, the supermarket aisle is a temple 🙏 Ingredients (serves 1) 2/3 cup greek yoghurt (or yoghurt of choice) (sub for any plant based yoghurt for the vegab version ) // 2 tbsp raisins // 2 Speculoos // 2 tbsp honey or maple syrup for the vegan version Instructions In your cup of choice, put a layer of yoghurt (1/3 cup)…
Chocolate cupcakes
Chocolate is those kind of things most either love or hate, but I’m more of a “middle” kind of girl. I enjoy my chocolate, but can live without it (sorry chocolate addicts). Made these cupcakes the other day with an amaaazing icing which you can find in my previous post. Chocolate cupcakes (makes 8) Look at this. Perfection. Ingredients 1 cup flour // 1/2 cup cocoa powder // 3/4 cup sugar // 1 medium egg and 2 tbsp egg white or 2 small eggs // 1 tsp baking powder // 8g vanilla sugar // freshly brewed coffee (1 cup) // 1/4 cup sunflower oil // a pinch of salt Instructions…
