Chickpea, Leek and Onion Fry Up with Hummus
My mom is a wonderful cook, and to this day I still believe no one compared to her. When I was a kid, she was never satisfied nor did she enjoy the food she cooked. I never really understood until I entered into the cooking and baking world myself. Sometimes I feel like, when you make something yourself, no matter how delicious it is, it is never the same as eating something someone else made for you.
This week I am eating vegetarian food only, which is really good as not only I love veggies but I also get to play with different kinds of food to create balanced recipes.
But this. This people, is different. And I will share with you the recipe right here (yay!).
Ingredients:
- 1 can of drained and rinced chickpeas (420g)
- 2 large leeks, sliced
- 1 medium red onion, cut in small slices
- 1 tsp of herbs mix
- A pinch of cumin
- Optional: a pinch of salt
- 1 tbsp of hummus
- 1/2 tbsp of peanut oil
Method:
1) Drain the chickpeas and rinse them
2) Wash and slice the green onions
3) Put some oil for cooking in a pan on medium heat. When ready, add the chickpeas and green onions.
4) Rinse and slice the red onion. Add to the pan.
5) Add some water to the pan. Cover and let it steam for about 8-10 min or until cooked. Add more water if needed, and check the food every 2 min to make sure it isn’t dry or burning.
6) Add the cumin and herbs to the mix. Mix well and let is steam for another 1 min.
7) Add the hummus and the oil to the mix, when ready. Mix well. Add more hummus if you feel like it 🙂
