Poffertjes (Dutch Mini-Pancakes)
Anyone knows what “poffertjes” are? These traditional dutch mini-pancakes are usually eaten with icing sugar and syrup, especially during holidays such as Christmas. You can also add berries and whipped cream on top! Ideally you would use a poffertjes pan, however I just baked mine on a pan and they still ended up spongy and light. The secret is to just put a tiny bit of batter at a time, to keep the poffertjes small, as they will rise and expand a bit. It’s a nice recipe that will be a good adding to a week-end brunch table.

Poffertjes (Dutch mini-pancakes)
You'll quickly fall in love with these fluffy and light dutch mini-pancakes, which are served with icing sugar on top!
Ingredients
- 2 cups Flour
- 2.5 tsp Yeast
- 2 cups Milk 2%
- 1 tbsp Sugar
- 1 package Vanilla sugar (7-8g) can substitute for 1 tsp of vanilla extract
- 1 Pinch of salt
Instructions
- Lightly warm up half of the milk and add to it the yeast. Let sit for 10-15min.
- Mix the flour with the sugar and the salt.
- Gradually add the yeast mixture then the rest of the milk. Cover and place in a warm area for an hour.
- Grease a pan and put about 1/2 tablespoon at a time of the batter. Bake on each side for about 15-20s on low heat, until slightly brown.
- Serve with icing sugar and syrup.
