    We have been experiencing heat waves this summer here in Montreal, and when it happens I tend to crave only cold things! Just like protein packed nice cream. The deal ? I blend a frozen banana with whatever other fruits I have but to make it more filling I add a scoop of protein powder and a dasg of milk. So good!     A few days ago a friend tagged me on a vegan pancakes video on Facebook. They were so fluffy and like regular ones, so I saved the recipe up for later.     Sweet Potato Pancakes

    Am I deserving of the title “pancake queen” yet ? I love to experiment with pancakes and always try new recipes. Take this one. More of a savoury recipe, but definitely worth trying. Ingredients: 1/2 medium sweet potato, mashed 1 egg 1/4 cup oat flour 1 tbsp coconut sugar 1 tbsp light margarine or butter   Instructions: Cook and mash the sweet potato Add the beaten egg, margarine/butter Add  the coconut sugar and the oat flour  Gradually add some milk Lightly grease a pan and bake the pancakes on each side until they’re ready
