French Beans, Tomatoes, Soy Mince & Carrots Pasta Dish

Finally found the time to sit down and write this 🙂 (perks of studying engineering I guess!). I found soya mince at my local Tesco the other day and decided to give it a try: no regrets! Was absolutely delicious and although it tastes obviously different that beef or lamb, it is perfect as an alternative to meat based bolognese 🙂 Ingredients  – One can (400g) of chopped tomatoes – 2 medium carrots – 300g of french beans – 200g of mince (I used soy mince, but meat mince is also fine) – 1.5 cups of wholewheat fusili pasta (or any other kind, gluten-free pasta can also be used)  …

    Wholemeal Flour Pancakes (makes 12)

Pancakes are so versatile. You can eat them with Nutella. Or salty food. Or sweet food. Or on their own, while baking them. Or with maple syrup. And did I mention Nutella ? Here’s my take on them. I didn’t have regular flour at home, so I used the wholemeal version. Accidentally healthy pancakes. Super cool. Ingredients: 1 cup wholemeal flour 1 tbsp baking powder 1 tbsp sugar 1 tbsp light margarine (or butter/applesauce. The applesauce could also give a sweet taste so why not 🙂 ) 2 medium eggs, beaten (or 2 tbsp of chia seeds + 6 tbsp water for the vegan version) 1 cup of milk (I…

    Cheesy & Eggy Sandwhich

After a hectic week, finally got to sit down to write this. I really love those kind of “recipes” you quickly make and that end up tasting absolutely de-li-cious. Made this easy yet tasty sandwhich the other day as I needed a fast lunch and couldn’t be bothered to cook anything else. It’s definitely the kind of recipe I’d teach my baby bro (who’s already 17, which makes me feel so old now) who’s going to uni next September, God willing. Enough talking now, time to share! Ingredients 2 slices of wholemeal loaf (or white loaf) 2 medium eggs 2 slices of cheese (I used regular cheese slices, but really, any…

    Spirulina Green Superbowl

Ok. So. Had a little trouble finding the perfect name for this dish. All green and natural, I mean come on! And tasty. Gluten free, vegan, vegetarian. All this. It’s the bomb 🙂 I added spirulina at the very end, opening my cupboard and thinking ‘I do need more protein in there’. For you who don’t know, spirulina is very rich in iron and proteins, and it is a vegan friendly option – you can use it in smoothies, yoghurts etc 🙂 The powder is very green though. Like very very green, so take extra care when handling it. You don’t want your whole kitchen to turn green. You really don’t. Anyway, enough talk,…

    Potato & Kidney Beans Burgers

As a fourth year student, I get a lot of free time. Meaning I can spend more time preparing my dishes, which is really awesome 🙂 I was seeing all over the internet all these veggie and vegan burgers and thought ‘wow, I should do the same !’. I absolutely love vegetarian burgers, they’re so versatile. Here’s a recipe I “created” this friday as I had no lectures.       Ingredients 330g of baby potatoes 120g kidney beans 1 cup of spinach Mixed herbs, cumin, salt, pepper to season 1 small egg   Method Boil the baby potatoes or steam them. You can follow my method: peel the baby potatoes,…

A Little Talk about Health and Fitness in General

Hey! So, as you know, my name is Rayane, and I’m currently a final year student in that beautiful city which is London. I started my “health and fitness” over a year ago. Now, it’s not to mean that I was particularly unhealthy before, I always tried to be active and eat diverse food within reason. I used to be quite a chubby kid, due to an allergy treatment, and have, thank God, managed to reach a healthy and normal weight as I grew older. When I was a teenager, I used to live back home in Morocco; therefore, even though counting calories and dieting were two things I wasn’t…
