Spiced Hot Chocolate (Vegan and refined-sugar free)
For some weird reason, even though I love hot chocolate, I haven’t had it in aaaages. I still remember the many cosy nights during my first year in the UK, where I’d take a warm hot chocolate at my local Costa and find a comfy place to study. Or the many times my brother and I, as kids, would have Nesquik for breakfast. Oh sweet, chocolaty memories The problem with industrial hot chocolate of course, is that it’s really high in sugar. I abide by a simple rule: I don’t buy cakes, hot chocolate or coffee mixes where sugar is the first ingredient. Cocoa and flour are ingredients – sugar should be an enhancer of flavor, only. I wanted tk recreate a healthy version and let me tell you, it ended up quite delicious
This is a vegan versiom so really, it’s appropriate for all and I really do hope you’ll give it a try at home.
Ingredients:
1 + 1/4 cup of unsweetened soy milk // 1 tbsp + 3/4 tsp cocoa powder // 3 medium dates or 1 large medjool date (adjust for sweetness) // 1 tsp of all spices (or cinnamon if you don’t have it)
Instructions
Blend everything // Then warm in a sauce pan on medium heat – while stirring regularly, but don’t bring to a boil
