Chocolate Cake with Ganache

For the cake:

– 1 + 1/4 cup flour
– 1 tsp baking powder
– 1 cup sugar
– 1/3 cup unsweetened cocoa powder
– 1 tbsp coffee powder
– 2 tbsp sunflower oil
– 1 tbsp butter
– 1 egg and 2 tbsp egg white
– 1/8 to 1/4 tsp salt to taste
– ~1/3 cup unsweetened vanilla almond milk

For the ganache:

– 1/3 cup icing sugar
– 2 tbsp tbsp butter
– 2 tbsp cocoa powder

1. In a large bowl, mix the flour, sugar, baking powder, salt, cocoa powder and coffee
2. Add the egg and the egg whites
3. Add the oil and the butter
4. Add the milk gradually (you can add more or less depending on the consistency)
5. Bake in a preaheated oven at 370°F for about 25-30min or until a knife comes out dry
6. In the meantime, make the icing. Mix all the ingredients until you get a thick and consistent cream. Reserve in the fridge for later
7. When the cake is ready, let cool down for about 30min then put in the fridge for about an hour until it has completely cooled down
8. Spread the icing over the cake and put in the fridge until you serve it
