Healthy Breakfast Banana Blueberries Muffins

Ok so guys. The situation is as follows, a few weeks ago I brought a second pack of frozen blueberries and just felt like I HAD to use them while making all sorts of cakes. What I love about these banana blueberries muffins is that they can be an awesome snack or breakfast on-the-go, with some eggs or peanut butter. Hope you like them 🙂

– 1 + 1/2 medium banana
– 1/2 cup oat flour
– 1/2 + 1/4  cup all purpose flour
– 3/4 tsp baking powder
– 2 tbsp coconut sugar
– 1 tbsp maple syrup
– Pinch of salt
– 3/4 cup blueberries
– 1 egg
– 1 tbsp egg white
– 1/2 cup sweetened almond milk

1. Mash the banana and mix it with the sugar and maple syrup
2. In another bowl, mix the flours, baming powder, and pinch of salt
3. Add the mashed banana to it
4. Add the beaten egg and egf white
5. Gradually add the milk while stirring
6. Add the blueberries
7. Bake in a preheated oven at 370°F for 25min
