Easy peasy sweet potato mash
Yesterday, I organized a late Thanksgiving lunch with some friends. I was not only happy because I managed to cook a whole 12 pounds turkey by myself, but also because there was no sweet potato mash left at the end. I’m just a big potato lover. Nothing beats my mom’s potato puree, or some good fries from McDonald’s (I don’t care what they say, still my favorite!). So, there you go 🙂 Ingredients 3 large sweet potatoes // 3 tbsp of margarine // 3/4 cup of plant-based milk // 1 tsp of cinnamon // a handful of sunflower seeds Instructions Wash, peel and boil or steam the potatoes until soft…
Cocoa Oat Cookies
Sometimes, all you need is a cookie with some milk. Amiright ? So, the other day, while I wad procrastibaking as usual, I decided to make some cookies. And they ended up good! So, here is the recipe! Ingredients 1 cup of oats //2 tsp of cocoa powder // 1 egg // 2 tbsp of sugar // 2 tbsp of chia seeds and 6 tbsp of water // A few tbsp of plant based milk to make a consistent mix (it shouldn’t be liquidy) Instructions Preheat the oven (365F or 180C). Mix all the ingredients. Grease a pan and bake the cookies for about 25min. They should be just a…
Spiced cake
I love it when I try a recipe for the first time and it works. Like super well. Well, I was procrastibaking the other day and decided baking a cake but with spices would be appropriate. Finished it yesterday. I wish I could lick the screen. Looking gorgeous. Here’s the recipe! Ingredients (serves 10) 3/4 cup of white flour // 3/4 tsp of baking powder // 1/4 cup of sugar // 1 tsp of honey // 1.5 tsp f all spices // 1/3 cup of raisins // 2 egg whites // 1/4 cup of spiced tea (Got mine from David’s Tea) Instructions Preheat the oven (180 C or 375 F)…
Dill Sandwhich Spread
Last Saturday, I went to Montreal’s Vegan Festival and had an amaaazing vegan hot-(non)dog. Juicy, big, thick, with lots of sauce. That was clearly the highlight of my week 🙂 Anyways, was walking down the supermarket aisles the other day when I noticed they had hot dog bread. By chance, the vegan section was not far, so I obviously had to take some sausages. Back home, I then created a yummy vegan hot dog, with dill sauce. It’s super easy to make and, to be honest, I didn’t really measure the quantities. You can put this spread on any sandwhich, of mix it with any kind of veggies or meat. Gorgeous.…
Classic Fluffy Bagels
Ah Bagels. God’s gift to man. One of the best inventions of all times. Now I used to live in the UK, where bagels with salmon and cream cheese are an institution (and I do miss them a lot). Montreal bagels are also delicious, albeit different. Basically, british bagels are fluffier and Montreal bagels are “harder” and poached in honey water, to give them a sweet flavor. I wanted to try and make my own bagels the other day, and after having looked at various recipes online, I came with my own recipe, light and vegan 🙂 Talking with different people, I always get ‘baking is hard’ – it isn’t,…
Breakfast Tortilla
I swear, I didn’t do it on purpose. Actually, I just realized even the green and red colors remind me of Mexico. It’s Sunday, so hell yeah, I wanted a fancy brekkie. This tortilla IS fancy and vegan friendly, so there you go for the “recipe” (which is not really one). Ingredients : 1 medium tortilla // 1/3 cup of cubbed and already cooked tofu // 1/4 cup of sliced button mushrooms // 1/4 cup of baby tomatoes // a handful of arragula // some sliced olives to put on top // margarine or butter to grease the pan // soy sauce // (optional) pepper and salt to taste //…
Since I moved to Canada, I’ve been so obsessed with fall, and doing all the activities related to it. It’s probably because I have always lived in countries where the fall season is not that obvious. I am still amazed at the beautiful orange/red/yellow shades of leaves. To celebrate fall and pumpkins, I prepared these cupcakes the other day. Look at this cute little tower (NB: they may or may not have fell after I took this picture). Here is the recipe 🙂 Ingredients 1/2 cup of wholewheat flour // 1/4 cup of white flour // 1tsp of baking powder // 40g of brown sugar // 2 egg whites…
Classic iced cake
Classics never go out of fashion, right! I made this yummy cake the other day and I’m in love 🙂 I don’t really have a sweet tooth, thank God for that, but I do appreciate a moist cake from time to time. However, the sugar overload is sometimes ridiculous! Especially as it is absolutely not necessary. The secret is so put egg whites instead of whole eggs. That’s less fat, and the taste is absolutely the same, believe me! But well, enough talking, let’s talk about the real superstar here. Gorgeous. I mean, come on! Okay. I need to stop the foodporn now. Let’s dooo this Ingredients For the cake:…
Healthy Banana Bread
First of all, happy belated Thangsgiving my canadian friends! No Turkey for me this year. Just enjoyed the sunshine while I can 🙂 Anyway, any month is bananas month. Who else agrees ? If you now me, you probably now I’m obssessed with bananas. And banana bread. However, that’s a fact: I only need to look at cake to put on weight and so, I need to keep it as a treat. I’ve been looking for ages for a healthy recipe so I can indulge in my guilty pleasure more often. I have been looking at various recipes and finally tried this version. Believe me, it was absolutely delicious 😋…
Plum and Peach Jam
Summer rhymes with jam right ? I was strolling in Edgware Road today and found some Kilner jars. I have never owned one myself, so I decided it was time to. I totally  bought the jar and then decided what to put into it, because I am cool like that 🙂 Today was the first day I have ever prepared a homemade jam. Jam is so easy to make and everyone should start I believe. Fruits, sugar, water, and any additives (spices, caramon, anise, cinnamon etc), and you’re good to go! Ingredients: 240g of peaches 240g of plums 250g of sugar (more or less) 1 tbsp of maple syrup…
