Cauliflower and Cheese Mini-Pancakes (Low-Carb)
Basically, carbs are life but yes yes, low and no carb snacks can also be yummy 🙂 Take cauliflower for example. A vegetable not a lot of people love, but with the right spices and/or sauces, it can be super yummy. Here I added cheese, cause everyone loves cheese (I think) and it makes cauliflower less boring. I tend to put a minimal amount of salt as we grew up eatibg mostly salt-free food, but you can adjust the amount depending on your taste. Hope you like the recipe 🙂

Buttery Bread Rolls
Initially, these bread rolls were supposed to be scones. Initially. You see, sometime you kinda get the ingredients right but something else appears. Like when you try to make a salad and end up making cupcakes. Yep, that happens. These buttery bread rolls though, are probably one of my best mistakes. Soft, moist, full of favor. Nordic Breakfast Toast
I’m a massive proponent of brunch. To be honest, brunch >>>> dinner any day. I went on a date recently and my date had a nordic breakfast, which inspired me to make this toast. So much more colorful than cereals, and so full of proteins and all the good stuff 👌 Also. If you look closely, I may or may not have overcooked the poached eggs, so yeah. Still yummy 😎. But don’t overpoach your eggs.
Peanut Butter Chocolate Chip Cookies
On the one hand we got peanut butter cookies. Heaven. On the other hand we got chocolate chip cookies. Once again heaven. I always wondered why it rarely occurs to people to mix both. Then I stopped wondering and decided to just go for it and make these biscuits. They’re moist. Sweet but not too much. And you can definitely taste the peanut butter. And the melting chocolate chips.

Yesterday we had a potluck planned with friends, and as a baker I obviously had to go with dessert. I initially planned to make two recipes, brownies and chocolate chip cookies.
