Vegan Creamy Coconut Mushrooms on Toast

– 2 bread slices  (I used belgian white bread)

– 1 can of mushrooms, drained and washed
– 1/4 tsp salt
– 1/4 tsp black pepper
– 1/2 cup coconut milk (I used a light version)
– 1.5 tbsp corn starch
– Some rosemary leaves
– 4 tsp butter

1. In a greased pan, sauté the onions on low to medium heat
2. Mix the corn starch with the coconut milk and add it to the pan
3. Add the spices and rosemary leaves and let it simmer for 2-3 min
4. Toast the slices of bread and spread 2 tsp of butter on each slice
5. When mushrooms are ready, divide the mixture between the two toasts and serve
