    Roasted Vegetables

As a student, I love to cool things in batches and roasting vegetables is my favorite way to do so! Not only I end up with less dishes to do, but these roasted vegetables are also more tasty than simply boiled ones. And the ultimate bit ? The crunchiness when you take them out of the oven. I do think I like it as much as I love chocolate and I ain’t even ashamed. Here I used three of my favorite vegetables: red bell pepper (for some sweetness), eggplant, and zucchini. When I roast vegetables I usually put some mixed herbs (whatever I have at home, greek, or italian), and…

    Chocolate Chip Mug Cake

Hey peeps! Today I’m coming with an amazing chocolate chip mug cake you can make in under than 5 min. Like, um, where do I sign ? 🙂 When I was in London, I was the self-proclaimed queen of protein mug cakes. I used to have them quite often for breakfast. It’s been ages since I have made any mug cake, so I was kinda worries on how this would end up, but the end result is very nice! If you make it at home, let me know what you think! Note that here I have used honey, but you can totally use maple syrup or any other syrup you…

    Chocolate Chip Skillet Cookie

Hey peeps! Sorry for having been MIA lately. Had to catch up with lots of work but also got the time to do loads of baking. A few weeks ago I got a skillet for 14$ (initially because I wanted to make shakshuka), and decided it would be amazing to make a giant chocolate chip skillet cookie. A skillet cookie is basically your average cookie, but ten times bigger – I mean come oooon ?! This chocolate chip skillet cookie was a definite success, and I’ll definitely making more of these to impress friends here and there x Can I only put white sugar only / brown sugar only ?…

Thai Red Curry Coconut Shrimp Soup

Today I’m introducing one of my favorite recipes ever: a yummy thai coconut shrimp soup. A few days ago, the funniest thing happened. A friend and I were headed to have mexican for dinner, but upon arrival at the place, we realized it was in fact closed. Non-existant. So I suggested a thai place, as I had been craving a warm thai coconut shrimp soup since my last visit to Toronto. I decided to recreate a thai red curry coconut shrimp soup and I frankly am quite satisfied by the result. In this recipe I added some egg white noodles to add some carbs, but if you can use something…

    2-Ingredients Bagels

This week I am coming with a super easy and fast to make greek yoghurt bagels recipe. Not only they’re high in protein but, since we’re using baking powder, there is no wait for the dough to rise! (I got you, suuuper annoying as I get impatient). The first time I read greek yoghurt and bagels in the same sentence, I was a bit confused. My first reaction was “yeah! greek yoghurt bagels seem healthy” but in the back of my mind, I still somehow had a little doubt about how this could work. Until I decided a few days ago to give it a go. This greek yoghurt bagels…

Vegan Banana Bread (with coconut flour)

I love bananas. So much I always end up with 2 or 3 that get too ripped and that’s when I know it is banana bread time. I love to play around with banana bread and twist recipes, play with ratios – which my roomate absolutely hates. In this vegan banana bread I decided to add some coconut flour, to give a slightly different taste than your usual banana bread. This is much more than a plain vegan banana bread. This is a vegan banana bread 2.0. Can I substitue coconut flour for another type of flour ? Of course. Almond flour would do wonders! As it has a weaker…

I managed to make these bagels in less than 45min, which is quite an achievement! I also brought some to my friends at the office and they all liked them. Hope you try the recipe! These super fast to make bagels require no rising time!…

    Beetroot and Tuna Salad

You know when they say pasta is a lazy student’s favorite dish ? Well I gotta disagree! For me salads, just like this amazing beetroot and tuna salad, are not only healthy but also the easiest thing a lazy human can make. Think about it, nothing to cook or boil, just veggies to cut and mix together. Whereas pasta…wait – talking about pasta, I got a nice anecdote. During my second year in the UK, I used to live in a students’ housing, or accodomation as it is called in the UK. The amount of times I forgot (and almost burnt!) my pasta on the stove. (Probably why I stick…

    Summer Moroccan Salad

Gosh, already one week down of Ramadan. This year’s fast is going quite well – I’m less productive than usual but I don’t let it go to my head so much. The month usually goes by so fast, so I’m glad I’m doing my best at still acomplishing all the tasks I need to do. It’s quite hot in Montreal lately, meaning I have been craving fresh salads and fruits more and more. So thought I’d be sharing this with you! I grew up in Morocco where having tomatoes at home is like having bread or water: it is just so obvious. I also thought everyone else in the world…
