    Lemon Chia Seed Cake

My favorite cakes are moist, but not buttery cakes. I was sick for a few days and loaded up on lemons, so I just figured out I obviously had to do something involving lemons. And what’s better than a lemon cake? This lemon cake with chia seeds nailed it in terms of texture, and from now on I’ll be following the same ratios in baking. Rule number one, for moist cakes, is to use 1/4 cup of butter for every cup of butter. Another thing is to make use of brown or coconut sugar! sugar  The darker color of this cake comes from the fact I subsituted about 2/3 of…

    The Best Chocolate Chip Cookies

If there is one recipe every baking enthusiast needs, it’s a good ol’ chocolate chip recipe. Easy and fast to make, gooey, and perfect for any occasion (or non-occasion). I have been hooked on chocolate chip cookies forever. I don’t usually dip mine in milk, though! A few comments about chocolate chips: Sugar White sugar and brown sugar do not exactly behave the same, and playing with ratios will give you different textures. Brown sugar contains molasses, which will make your cookie softer. As a general rule I like to go with a ratio of brown sugar: white sugar of 2:1 Can I substitute coconut sugar for brown sugar? Yes…

    The Best Vanilla Cupcakes

If you’re looking for the best, fluffy, light vanilla cupcakes recipe, don’t move! You’re in the right place. I’m a self proclaimed cupcake queen, cupcakes are my first love. When I moved to London for my studies, I was finally free to experiment as I wished in the kitchen without my mom fearing for the safety of her house. One of the first books I bought (I actually got 5 of them, one for me and each of my aunts, cause my 17-year-old mind) was a cupcakes recipe books. At the time I didn’t bother with any fancy baking equipment and I was literally using a gray pan and a…

The Most Perfect, Easy to Make Swiss Meringue Buttercream Recipe

When I first started baking more seriously, american buttercream was my go-to cream. Sweet, creamy, you name it! However, swiss meringue is definitely my favorite. When you try it you might want to completely switch over to it! It works well in cakes, cupcakes, scones, and it is indefinitely customizable! Swiss Meringue Buttercream might seem trickier to make than American buttercream, as it involve heating egg whites with sugar until the sugar has dissolved, but once you try it there’s no going back! Possible variations include: Mint: add 1 tsp of peppermint extract and 1/2 tsp of green food coloring Lemon: Add zest of one lemon and 2 tsp of…

    The Best Banana Bread Recipe

If you follow my instagram, you probably know how much I love bananas, and banana bread. It’s most definitely in my top 3 favorite desserts. I have made many banana bread variations among the years. My first attempts ended up too “banany” (if that’s even a word!) or too dense, and not enough fluffy. I made this cake yesterday evening, and I absolutely fell in love with the texture of it. Banana bread is super easy to make, and you probably already have all you need at home. I always keep some bananas with me at home, some frozen to quickly threw into a smoothie or to make banana “ice…

    The Best Brownies

Guys. These brownies were the bomb. Thinking about it, I have probably made brownies one or twice at most in my life. I always get flashbacks of nice childhood memories whenever I eat some, as my mom used to (and still) does make an incredible recipe. These brownies I made are soft, moist, and just the perfect brownies texture. I also added some chocolate chunks, and when they melt the brownies become gooey and all 😍 Ok, I really need to some being too graphic, and get straight to the recipe! Gooey, chocolaty brownies with melting chocolate chunks1

    Beefless Ground Dish

Even though I’m not a vegan, I love to eat plant based proteins and I try to have a varied diet as much as possible 😊 Beefless ground is one of my favorite substitutes, so full of flavor, filling, and it mixes well with pretty much everything! I made this dish the other day and been having it for the last few days. The recipe serves 3-5 people. Ingredients: – 3 medium carrots – 2 1/4 cup soy protein – 1 medium white onion – 1 1/2 cup garden leas – 1 tbsp of vegetable oil – 6 tbsp + 1/4 cup of water – 1 tbsp tomato paste –…

    Healthy, 4-ingredients Buckwheat Crepes

One of my favorite desserts is large crepes filled with lots of Nutella. Unfortunately this is not something you can eat everyday for breakfast, however, this super healthy buckwheat crepes recipe will finally make having crepes for breakfast acceptable. Toppings include jam (apricot jam is my favorite!), a little bit of Nutella or peanut butter. Oh and, the best part is that you only need 4 ingredients! Ingredients: – 1/2 cup buckwheat flour – 1 tsp cocounut sugar – 2 beaten eggs – 3/4 cup milk of choice (I used unsweetened almond-coconut milk) Instructions: – In a large bowl, mix the the eggs with the coconut sugar – Add 1/4…

    The Fluffiest Vegan Pancakes

A few days ago a friend tagged me on a vegan pancakes video on Facebook. They were so fluffy and like regular ones, so I saved the recipe up for later. Vegan pancakes do not have eggs or dairy, and I love challenges, so I got inspired and decided to make my own vegan pancakes recipe. I’m quite happy how they ended up. Soft, fluffy and filling. As all pancakes should be. Ingredients: – 3/4 cup regular flour – 1/4 cup wholewheat flour – 2 tsp baking powder – 2 tbsp coconut sugar – 2 tbsp softened vegan butter – 2 tsp apple cider vinegar – 1 cup almond-coconut milk…
