Irish soda bread
We all love the smell of homemade bread straight of the oven. However, we don’t like to knead it, and then waaaait for the dough the rise, then turn it into the desired shape, and then wait agaaaain for it to rise. Oh and did I mention baking AND cooling time ? Yeah, can’t be bothered. That’s when the Irish came to save our lives. No, not with green beer, but with soda bread. In a few days, make sure to thank St.Patrick for soda bread. Amen. Cause well, ain’t nobody got the time to wait. Yes yes, you can make bread using baking soda. Don’t believe me ? Try it…
Gofundme campaign and startup
Ok. I did it. I launched a gofundme campaign. I finally took the first step towards making my dream a reality. I wish I could say I could bake before I could crawl, but that won’t be true (but oh so cool). As you all know, baking in my passion. It relaxes me and nothing is more fun than twisting my favorite recipes or trying healthier versions. As a student I’m always on the go, and found that most snacks available on the market are either too expensive or simply unhealthy and highly processed. I see to change that, through SimpleBakes: by bringing daily, vegan, homemade, affordable, snacks to the…
Iced sugar moon biscuits
I used to looooove moon shaped biscuits, dipped in icing sugar, when I was a kid. My aunt would regularly make them and I would eat 5 of them at once. Yep,that was just how much I loved them. I made a slightly modified version the other day, and I really hope you like it 🙂 Ingredients 3/4 cup flour // 1/3 cup sugar // 2.5 tbsp margarine // 2 tbsp egg white // // 1 tsp vanilla extract or vanilla sugar // one cup of icing sugar, to coat the biscuits Instructions Mix everything together in a bowl // when you get a consistent dough, shape the biscuits in…
“Pulled” Tofu
Hey guys! Sorry for not having been much on the blog lately. These past days have been full of work and hustle 😃 But! I’m back with this delicous recipe. I just can’t describe the taste of the sauce as it’s different tastes mixed together 😍😍 There you go: Ingredients 220 g tofu, diced and boiled // 0.5 cup kidney beans, previously boiled or canned (make sure you wash them) // 2 small white onions, cut and fried // 1 tsp paprika // 1 tsp cumin // a pinch of salt // 1 tsp honey or maple syrup // 1 tbsp of corn starch // 1 tsbp of brown sugar…
Seedful Cookies
Guys. I swear, moments of improvisation are the best. Take this. I literally grabbed a bowl and threw a bunch of ingredients together. Obviously using cups, otherwise I’m left with recipes I just cannot recreate. Yay! Not cool. Anyways, this is a recipe you gotta try. Oh and it’s easily veganized, using maple syrup instead of honey. Or even agave syrup or golden syrup. Or just adding sugar and bypassing the whole honey/syrup thing. Flexibility. I love that word. Look at this. And this. Enough pictures though, here’s the recipe, hope you like it 🙂: Ingredients (for 2 large, thick cookies or 4 medium ones) 2/3 cup rolled oats…
Homemade Gravy (Vegan)
Ok so. Sorry for being MIA this past week. I was litterally drowning in equations! However, I did miss uploading on the blog and so, I’m starting with this vegan gravy, which can also be consummed as a soup 🙂 Look at this. Looks delicious? Imagine this gravy with a poutine, or even alone as a soup. I say yes!! Ingredients 2/3 cup of diced mushrooms (canned or boiled, keep the water)// 1 medium onion, boiled and diced // some black pepper, sea salt to taste // 1.5 tbsp of corn starch // 1/2 cup of mushroom water (used for boiling) + 1/2 cup of water OR 1/2 cup of…
Spiced Hot Chocolate (Vegan and refined-sugar free)
For some weird reason, even though I love hot chocolate, I haven’t had it in aaaages. I still remember the many cosy nights during my first year in the UK, where I’d take a warm hot chocolate at my local Costa and find a comfy place to study. Or the many times my brother and I, as kids, would have Nesquik for breakfast. Oh sweet, chocolaty memories 🙂 The problem with industrial hot chocolate of course, is that it’s really high in sugar. I abide by a simple rule: I don’t buy cakes, hot chocolate or coffee mixes where sugar is the first ingredient. Cocoa and flour are ingredients –…
Black&White cookies
Merry Christmas! Christmas is the time for cookies, right ? Then you might want to try these. I love chocolate and I love vanilla, and love it absolutely more when they mix together. Ingredients 0.5 cup of all purpose flour // 0.5 cup of oat flour (if you don’t have it, just process regular oats in a blender or food processor until you get flour) // 0.5 tsp of baking powder // 1 tbsp of sugar // 2 tsp of cacao powder // 0.5 tsp of maple syrup // 1.5 tbsp of vegan butter // some soy milk (~1/4- 1/3 cup) (preferably unsweetened) For the icing chocolate: 3 tsp of…
Vegan Cornmeal Cake
When I was a small kid, I used to ate from time to time a very delicious cake my parents would buy from the bakery. I never knew its ingredients, so more than a decade later, all my attempts to find the recipe were unauccessful. My parents were equally helpless. I organized a late Thanksgiving lunch with some friends a week ago, and I obviously made cornmeal muffins. The first bite was special – I had finally found what I was looking for! The cake I used to eat as a kid had cornmeal in it. I tried different recipes using cornmeal over the last week, but this gotta be…
Vegan cornmeal pancakes
I love pancakes. Who doesn’t like nice fluffy american pancakes, dripped with maple syrup ? I am also always up for a twist. I had cornmeal left from Thanksgiving, so I gave these cornmeal pancakes a try 🙂 They’re also vegan, making them suitable for people with lactose intolerance or egg allergy. There you go: Ingredients 1 cup of soy milk // 0.5 cup of flour // 0.5 cup of cornmeal // 1 tsp of baking powder // 2tsp of sugar // 1.5 tsp of margarine Chocolate Sauce 1 tsp of cocoa powder // 1 tsp of icing sugar // 2tsp of water
