Sunflower/Pumkin Granola Bars
Making things from scratch is cheaper, healthier, funnier, and smells better (who doesn’t like the fresh smell of a cake straight out the oven ? 😋). And man, that feeling of accomplishment if what you made ends up delicious. I made these bars yesterday very fast, I improvised and they ended up really good. Hope you’ll like them too! Oh and…these bars are refined sugar free 😊 Sunflower/Pumkin Granola Bars (serves 8) Ingredients 1 1/4 cup oats // 1/4 cup raisins // 1/2 tbsp pumkin seeds // 1/4 cup sunflower seeds // 1/3 cup honey //2 tbsp softened butter Instructions: Mix all the ingredients together // Put in a 20cmx20cm…
Moistest Banana Bread
If I had to chose to eat only one cake for the rest of my life, it would be banana bread, hands down. I mean, it has bananas in it and bananas are good for you, which removes part of the guilt. Tbh guys, I often improvise when I make cakes. That way, I feel they have more “soul” to them. Anyone feels the same way?? 😁 I had two bananas which were getting blacker and blacker, so instead of throwing them away like the average Joe will do, I decided to keep them and make something more purposeful of them. Hope yoh like the cake as I and my…
Batbout (Moroccan Semolina Pan Bread)
No bread ? No problem. This moroccan semolina bread is called “batbout” and it’s pretty much superman, as you literally cook it in a pan. For 1 medium batbout or 2 small ones: Ingredients: 1/2 cup fine semolina // 1/4 cup all-purpose flour // 1/2 tsp yeast // a pinch of salt // about 1/3 cup of warm water Instructions: In a large bowl, add the flour, semolina, yeast and salt // gradually add the water to form a non-sticky dough // Form a ball and let it rest for about 45 min // When ready, spread the dough circularly until is about 1 cm thick // Grease a pan…
Pie Crust
I love making stuff from scratch. Messy hands are the best hands 🤗. Pie crust dough is super easy to make and customizable whether you want it sweet or not. Here we go: Ingredients 2 cups flour // 3/4 cup softened (not liquified) butter (you can use vegan butter or margarine too) // 1/2 cup water // (optional: for a sweet crust, add 3 tbsp of sugar) Instructions In a large bowl, mix the flour and the softened butter. You should get a lumpy, sand-like texture // Gradually add the water while working the dough. You should get a soft and light dough. If too sticky, add some flour as…
Veggie tart
I wanted to recreate this tart where veggies look like flowers for aaaages. Yesterday I finally sat down and decided to make it. For this one I used carrots and courgette/zucchinis cause it’s easy to get thin slices of them. I also made my own crust, cause it is funnier but any store-crust would do fine as well. I hope you’ll like it just like I did 🙂 Ingredients For the homemade crust ——————– 2 cups flour // 3/4 cup softened (not liquified) butter // 1/2 cup water For the filling ——————– 2 eggs // 1/4-1/3 cup milk (depending on the size of the pie) // 2 tbsp double cream…
Raisins – Speculoos Parfait
Everything involving Speculoos is a good thing. Just pike this yoghurt parfait for example. Sweet, full of goodness (Speculoos are good for the mind right ?) and damn so pretty. This is quite rich, so perfect as a cheat. I actually got this idea while doing my groceries. For foodies, the supermarket aisle is a temple 🙏 Ingredients (serves 1) 2/3 cup greek yoghurt (or yoghurt of choice) (sub for any plant based yoghurt for the vegab version ) // 2 tbsp raisins // 2 Speculoos // 2 tbsp honey or maple syrup for the vegan version Instructions In your cup of choice, put a layer of yoghurt (1/3 cup)…
Chocolate cupcakes
Chocolate is those kind of things most either love or hate, but I’m more of a “middle” kind of girl. I enjoy my chocolate, but can live without it (sorry chocolate addicts). Made these cupcakes the other day with an amaaazing icing which you can find in my previous post. Chocolate cupcakes (makes 8) Look at this. Perfection. Ingredients 1 cup flour // 1/2 cup cocoa powder // 3/4 cup sugar // 1 medium egg and 2 tbsp egg white or 2 small eggs // 1 tsp baking powder // 8g vanilla sugar // freshly brewed coffee (1 cup) // 1/4 cup sunflower oil // a pinch of salt Instructions…
Buttercream (chocolate and vanilla)
Let’s talk about buttercream. I love it because it’s very versatile and easy to make. The butter to icing sugar ratio I normally follow is 1:3. Of course, you can also add some vanilla extract, milk or maple syrup to taste. Or you could substitute some icing sugar for cocoa powder. Just make sure the cream stays consistent, cause a cream that’s too liquid wouldn’t set very well of course. Also, it’s always a nice idea to put the icing if thr fridge for 30 min before putting it on the cupcakes or cake, so that it sets properly. Chocolate buttercream (8 cupcakes): 3 tbsp cocoa powder // 1/2 cup…
Simple Cookies
Simplicity is best. And cookies are definity the ultimate proof of that. I mean, who doesn’t love melting chocolate chips ? 😍 Well, my flatmate doesn’t but that’s another story. I made these cookies yesterday and they: 1)are easy to make. You probably have all the ingredients already and you can replace the chocolate chips with raisins (even though, your friends might hate you for being tricked it’s chocolate when it’s really raisins) and 2)can be either soft or crunchier, depending on how you like them. But enough talking, let’s get into serious things shall we? Ingredients (makes…
Chocolate Protein Balls
Guys. In the past to criminals in the Roman Empire, they used to attach each one of their limbs to a horse. Then order the horses to run in all directions. Ouch. I feel like life is trying to do that to me. So many things to do which have NOTHING to do with each other. Gotta process my simulations result. Prepare my french lessons (I’m a french teacher too). Work on the model of a CubeSat satellite we’re trying to send into space – if we win the competition – with ANOTHER team. On top of that I’m preparing for the Dobson cup. Now don’t get it wrong, I…
