Black&White cookies
Merry Christmas! Christmas is the time for cookies, right ? Then you might want to try these. I love chocolate and I love vanilla, and love it absolutely more when they mix together. Ingredients 0.5 cup of all purpose flour // 0.5 cup of oat flour (if you don’t have it, just process regular oats in a blender or food processor until you get flour) // 0.5 tsp of baking powder // 1 tbsp of sugar // 2 tsp of cacao powder // 0.5 tsp of maple syrup // 1.5 tbsp of vegan butter // some soy milk (~1/4- 1/3 cup) (preferably unsweetened) For the icing chocolate: 3 tsp of…
Vegan Cornmeal Cake
When I was a small kid, I used to ate from time to time a very delicious cake my parents would buy from the bakery. I never knew its ingredients, so more than a decade later, all my attempts to find the recipe were unauccessful. My parents were equally helpless. I organized a late Thanksgiving lunch with some friends a week ago, and I obviously made cornmeal muffins. The first bite was special – I had finally found what I was looking for! The cake I used to eat as a kid had cornmeal in it. I tried different recipes using cornmeal over the last week, but this gotta be…
Vegan cornmeal pancakes
I love pancakes. Who doesn’t like nice fluffy american pancakes, dripped with maple syrup ? I am also always up for a twist. I had cornmeal left from Thanksgiving, so I gave these cornmeal pancakes a try
They’re also vegan, making them suitable for people with lactose intolerance or egg allergy. There you go: Ingredients 1 cup of soy milk // 0.5 cup of flour // 0.5 cup of cornmeal // 1 tsp of baking powder // 2tsp of sugar // 1.5 tsp of margarine Chocolate Sauce 1 tsp of cocoa powder // 1 tsp of icing sugar // 2tsp of water
Peanut butter donuts
Okay, I gotta admit I have never been obsessed by donuts. Like, I’ll gladly have the odd one here and there but I’ll take a bagel over a donut everyday
. My mom….we’ll it’s another story! When she’s in London she has to get her Krispy Kreme donut. I saw this donut pan the other day and it was in sale, so i was like why not ? I could make my own oven baked version and impress my mommy when she visits. I had to add peanut butter, of course. Peanut butter makes everything better. Don’t disagree
Ingredients 1 cup of flour // 1 tsp of baking powder…
Easy peasy sweet potato mash
Yesterday, I organized a late Thanksgiving lunch with some friends. I was not only happy because I managed to cook a whole 12 pounds turkey by myself, but also because there was no sweet potato mash left at the end. I’m just a big potato lover. Nothing beats my mom’s potato puree, or some good fries from McDonald’s (I don’t care what they say, still my favorite!). So, there you go
Ingredients 3 large sweet potatoes // 3 tbsp of margarine // 3/4 cup of plant-based milk // 1 tsp of cinnamon // a handful of sunflower seeds Instructions Wash, peel and boil or steam the potatoes until soft…
Cocoa Oat Cookies
Sometimes, all you need is a cookie with some milk. Amiright ? So, the other day, while I wad procrastibaking as usual, I decided to make some cookies. And they ended up good! So, here is the recipe! Ingredients 1 cup of oats //2 tsp of cocoa powder // 1 egg // 2 tbsp of sugar // 2 tbsp of chia seeds and 6 tbsp of water // A few tbsp of plant based milk to make a consistent mix (it shouldn’t be liquidy) Instructions Preheat the oven (365F or 180C). Dill Sandwhich Spread
Last Saturday, I went to Montreal’s Vegan Festival and had an amaaazing vegan hot-(non)dog. Juicy, big, thick, with lots of sauce. That was clearly the highlight of my week
Anyways, was walking down the supermarket aisles the other day when I noticed they had hot dog bread. By chance, the vegan section was not far, so I obviously had to take some sausages. Back home, I then created a yummy vegan hot dog, with dill sauce. It’s super easy to make and, to be honest, I didn’t really measure the quantities. You can put this spread on any sandwhich, of mix it with any kind of veggies or meat. Gorgeous.…
Classic Fluffy Bagels
Ah Bagels. God’s gift to man. One of the best inventions of all times. Now I used to live in the UK, where bagels with salmon and cream cheese are an institution (and I do miss them a lot). Montreal bagels are also delicious, albeit different. Basically, british bagels are fluffier and Montreal bagels are “harder” and poached in honey water, to give them a sweet flavor. I wanted to try and make my own bagels the other day, and after having looked at various recipes online, I came with my own recipe, light and vegan
Talking with different people, I always get ‘baking is hard’ – it isn’t,…
Plum and Peach Jam
Summer rhymes with jam right ? I was strolling in Edgware Road today and found some Kilner jars. I have never owned one myself, so I decided it was time to. I totally bought the jar and then decided what to put into it, because I am cool like that
Today was the first day I have ever prepared a homemade jam. Jam is so easy to make and everyone should start I believe. Fruits, sugar, water, and any additives (spices, caramon, anise, cinnamon etc), and you’re good to go! Ingredients: 240g of peaches 240g of plums 250g of sugar (more or less) 1 tbsp of maple syrup…
Summer Fruity Porridge
I absolutely love berries. Especially when they’re frozen! I’ve never been a big fan of sweets, thank goodness, so frozen berries are a good compromise, especially during hot spring and summer days. So I tend to put frozen berries on top of as many dishes as I can, porridge included I made this porridge a while ago and thought I might share it with you
Let me know what you think in the comments below! Ingredients 3/4 cup of rolled oats // 300 ml of almond milk // 1.5 tsp of honey or maple syrup // 1 tsp of chia seeds // 1/3 cup of peach slices //…
